Family Meal Plan

Monday
- Main Dish: Fajita Tacos — No need to go to Chipotle because you can make it right at home and in under 20 minutes!
- Side Dish:
- Refried Beans or Black Beans — These are both restaurant quality and the family will love them.
- Cilantro Lime Rice — This rice is light and fresh which compliments the beans and fajitas perfectly.
Tuesday
- Main Dish: Tomato Basil Pasta — One of our easiest and fastest recipes on the website! It has the most delicious sauce made out of tomatoes, basil and herbs that is super family friendly. I like to add grilled chicken or even steak for extra protein.
- Side Dish:
- Garlic Roasted Veggies — My go to veggie side dish.
- Cheesy Garlic Bread — You know the kids will be running to the kitchen when they smell the garlic bread!
Wednesday
- Main Dish: Green Chile Chicken Casserole — I know what my audience likes and we are delivering with this recipe. You can throw it all together in minutes!
- Side Dish:
- Side Salad with Jalapeno Ranch Dressing — A drizzle of this dressing takes your salad to another level. I suggest doubling the dressing recipe so that you can eat it multiple times this week!
- Toppings — Black bean corn salsa, sour cream, salsa (this homemade version is so EASY), guacamole, shredded lettuce, cheddar cheese, chopped cilantro
Thursday
- Main Dish: Layered Taco Salad — It’s crunchy, creamy, packed with flavor, and comes together fast with no oven required. Perfect for busy nights when your people still expect dinner to taste amazing.
- Side Dish:
- Sautéed Peppers and Onions — These are my go-to when I need a quick veggie side that actually gets eaten. They go with everything!
- Mexican Cornbread — If your dinner needs a little something extra, this Mexican Cornbread is it. It’s just a little spicy, and so easy – basically the side dish that makes you look like you tried (even if you didn’t).
Friday
- Main Dish: Pull-Apart Pizza Bread — This is so much fun to make and to eat on a Friday night. If you’re kids are anything like mine they may even want to help you make this.
- Side Dish:
- Veggies and Ranch — Make. The. Ranch. It only takes an extra 5 minutes!
- Antipasto Salad — This quick salad is hearty and packed with all the meats.
- Dessert — Cowboy Cookies — You will definitely want to hide these from the kids! These Cowboy Cookies are big, chewy, and loaded with all the good stuff—oats, chocolate, coconut, and just enough crunch.
Appetizer
- Mango Salsa — I could eat this stuff by the spoonful, it’s just that good! Serve it with tortilla chips. I also like to make chicken and scoop this on. top of it if I am not doing an appetizer. 😉
