Family Meal Plan

Monday
- Main Dish: Crockpot Salsa Chicken — As you know, I make a lot of EASY recipes. This one might be the easiest though! It’s just 3 ingredients and 5 minutes of prep since it’s a crockpot meal!
- Side Dish:
- Cilantro Lime Rice — Tastes like Chipotle and is so easy to make.
- Mexican Caesar Salad — This is a quick 15 minute side dish that pairs perfectly with your salsa chicken.
Tuesday
- Main Dish: Ravioli Lasagna — This easy casserole comes together with little prep and the saucy cheesy flavors are big winners in my house!
- Side Dish:
- Roasted Vegetable Medley — This is one of my most popular side dish recipes!
- Garlic Bread — Garlic bread is a must when I serve any type of pasta.
Wednesday
- Main Dish: Loaded Chicken Salad — This isn’t your grandma’s chicken salad – you can use leftover chicken or buy a rotisserie chicken to shred and use for this to make it come together even faster.
- Side Dish:
- Spinach and Artichoke Quiche — Everyone’s favorite dip, but heartier.
- Rotini Pasta Salad — I love serving this with other salads for a lighter meal during the warmer months.
Thursday
- Main Dish: – Southwest Pork Chops — This recipe is always a hit with the whole family. We use bone in with this recipe and it is worth it – it delivers the most tender and juicy results.
- Side Dish:
- Mexican Corn Salad — As the days are warming up this is a side dish I love to make!
- Buttermilk Cornbread — Yes, I’m biased but hear me out when I say this is the BEST cornbread recipe! It’s all about my cooking method so make sure to read the instructions.
Friday
- Main Dish: Firecracker Chicken — These tender chicken bites are smothered in an irresistible sauce! If your family loves it as much as mine does, it’ll disappear quickly.
- Side Dish:
- Sautéed Green Beans — My favorite side dish is one that doesn’t create much mess – these green beans are fast, use only one skillet, and are the answer!
- Rice — White or brown or even try cauliflower rice to keep it light.
- Sauces — Yum Yum Sauce for the kids and Spicy Mayo for the adults – but really we like both and choices are fun 😉
- Dessert – Fudgy Brownies — If you are a chocolate lover, these are for you!
Appetizer
- Loaded Taco Dip — When it’s good it’s good and I feel like taco dip is just a universal “yes” when you see it out on a table.
