Family Meal Plan

Monday
- Main Dish: Southwest Chicken Bowls – This is a meal I CRAVE because the flavors are so amazing! It’s also is a great recipe for meal prep.
- Side Dish:
- Black-bean corn salsa – The veggies, herbs and seasonings in this make the perfect salsa. You’ll want to top everything with this!
- Cilantro-lime rice – This is a copycat Chipotle recipe and has the perfect amount of tangy flavor for your chicken to go right on top of.
Tuesday
- Main Dish: Cottage Cheese Egg Bites – Let’s do breakfast for dinner! These egg bites are so good and if you haven’t gotten onto the cottage cheese train yet, you need to start with these! I LOVE how much protein it provides my family.
- Side Dish:
- Crispy Bacon – Bacon made in the oven turns out perfectly every single time!
- Cheesy Hashbrown Casserole – I grew up eating the Hashbrown Casserole from Cracker Barrel and it has always been my standard for this side dish.
Wednesday
- Main Dish: Burrata Chicken Parmesan – If you like chicken parm, you will be blown away by this! It’s perfectly cheesy and crispy making it a magical chicken dish.
- Side Dish:
- Creamy Pesto Tortellini – I love a simple, yet hearty side dish. This cooks in one pan and is ready in 20 minutes
- Parmesan Roasted Cauliflower – This caulifower has little crispy pieces that the kids love.
Thursday
- Main Dish: Southern Pot Roast with Potatoes – Eat this for dinner tonight, but use the leftovers for meal prep or extra quick lunches throughout the week.
- Side Dish:
- Salad with Buttermilk Ranch – This dressing takes 5 minutes and stays good in the fridge for at least a week!
- Cheddar Bay Biscuits – I love fluffy and delicious biscuits with my pot roast.
Friday
- Main Dish: Lemon Basil Chicken Pasta – You will have dinner on the table in no time with this recipe! Tangy lemon, hearty pasta, fresh basil, rich butter, and tender chicken creates a 5 star meal, but only takes 20 minutes to make.
- Side Dish:
- Garlic Bread – If you need a go to garlic bread recipe, let this be it!
- Parmesan Broccoli – Family favorite!
- Dessert – Red Velvet Cookies – You will not believe that these light and fluffy cookies only need a few ingredients!
Appetizer
- Buffalo Chicken Roll Ups – Buffalo Chicken Roll Ups make the perfect party appetizer since they are bite sized. I also like to make them for quick snacks or lunch.
