Monday
- Main Dish: Southwest Grilled Chicken – A few ingredients for the most delicious chicken. Make sure to read my tips for the juiciest chicken!
- Side Dish:
- Sautéed Peppers and Onions – This is a family friendly favorite and I probably make it once a week.
- Cilantro Lime Pasta Salad – Super easy, perfect cold salad that can be prepped ahead of time.
Tuesday
- Main Dish: Million Dollar Spaghetti Bake – This is the ultimate spaghetti dish – it is hearty, filling, and great for when you need to feed a crowd.
- Side Dish:
- Garlic Bread – The secret ingredient in this makes this bread better than any other!
- Tomato Basil Mozzarella Salad – Light, quick and so delicious.
Wednesday
- Main Dish: Baja Bowls – This is a knock-off version of a bowl I am obsessed with from Panera and Costa Vida. This recipe is a quick and budget-friendly at-home version that you won’t be able to quit!
- Side Dish:
- Chips with Homemade Guacamole and salsa.
- Easy Mexican Cornbread – My go to side dish when I make Baja bowls.
Thursday
- Main Dish: Mexican Street Corn Chicken – This couldn’t be any easier or more delicious!
- Side Dish:
- Mexican Rice or Cilantro Lime Rice – Keep it traditional!
- Black Beans – If you’ve never doctored up canned black beans before, you have to try these. No one will ever know they weren’t simmering all day!
Friday
- Main Dish: Baked Creamy Garlic Pork Chops – These creamy pork chops only need 10 minutes of prep! They’re the perfect quick weeknight meal.
- Side Dish:
- Steakhouse Wedge Salad – This salad comes together quickly with very little effort. I highly suggest also making this Bleu Cheese Dressing.
- Homemade Mashed Potatoes – There is nothing better than mashed potatoes and pork chops.
- Dessert – Churro Cheesecake Bars – These are the perfect little sweet treat.
Appetizer
- Cold Spinach Feta Dip – I love that this appetizer doesn’t require any cooking and it’s packed with amazing flavor!
