Family Meal Plan

Meal Plan – Week 269

Monday

  • Main Dish: ​Crockpot Tuscan Chicken​ – This is one of the most popular recipes on my site and you’ll see why after you try it.*save your leftovers for Wednesday*
    • Dawn says “Out of this world delish. The family practically licked their plates and already asked when I could make it again. Not gonna lie, I let them believe it was kind of hard to make when it reality it was the easiest meal I’ve ever made. Can’t thank you enough!”
  • Side Dish:
    • Parmesan Cauliflower Bites – In just a few minutes you will have a healthy, crispy, and delicious side dish.
    • Easy Caprese Salad – Fresh tomatoes and buffalo mozzarella are always a crowd favorite.
    • Rice – You can use either white or brown. If you want to keep the meal lighter, you can use cauliflower rice to keep it healthy.
    • Pasta – Spaghetti, fettuccine or egg noodles will work well. Once the noodles are cooked, just toss them with a little olive oil and garlic, then serve the tuscan chicken right on top. A lighter option would be zucchini noodles.

Tuesday

  • Main Dish: Baked Tortellini Casserole – This recipe couldn’t get much easier. If you want to make your dish leaner, swap the beef out for ground turkey. It’ll still taste just as great!
  • Side Dish:
    • Garlic Bread – A classic garlic bread is the only way to go when you’re serving it alongside a baked pasta dish.
    • Brown Butter Broccoli – Have you ever browned butter? It creates the most delicious, rich, almost nutty flavor that really transforms whatever dish it is in. It’s what makes this broccoli irresistible!

Wednesday

  • Main Dish: Tuscan Chicken Pizza – Using Monday’s leftover tuscan chicken you can make just about anything, but we’re going for pizza. Spread a prepared pizza crust with pesto. Chop up your leftover chicken and veggies and spread evenly over the pesto. Top with mozzarella cheese and bake as directed.
  • Side Dish:
    • Best Roasted Veggies – You can’t go wrong with this side dish.
    • Classic Wedge Salad – A wedge salad always sounds fancy, but really it is so easy! Do not miss out on making this blue cheese dressing from scratch.

Thursday

  • Main Dish: Chicken Tender Subs – Do you know what a pub sub is? If you have a Publix you probably do. If not, you are in for a treat because this recipe is my version of their chicken tender sandwich and now you can make them any day you’d like!
  • Side Dish:
    • Deviled Egg Potato Salad – This is the BEST potato salad!
    • Herb Roasted Potatoes – These are a delicious unexpected side dish. They are quickly becoming a go-to side dish for me because they go well with so many different recipes.

Friday

  • Main dish: EASY Chicken Cordon Blue – This casserole only needs a few minutes of prep and is perfect on a busy Friday night.
  • Side Dish:
    • Tortellini Salad – You can easily prep this salad the day before if you know you’ll be busy on Friday. This is also great to make so that you have leftovers the next day for lunch.
    • Loaded Baked Potato Soup – This is a great way to really bulk up your meal! My family loves when I make potato soup and I promise it’s easier to make than you think.
  • Dessert – Chocolate Chip Pudding Cookies – It’s 2024 and it’s time you have a go to cookie recipe. This. Is. It. Throw the rest away!

Appetizer

  • Slow Cooker Buffalo Wings – I have made A LOT of wings, but I will never make them another way. In 5 minutes you can have these prepped and then when they’re finished cooking they just fall apart because they’re so tender!
