Family Meal Plan

Monday
- Main Dish: Southwest Chicken – This is my favorite flavor infused chicken. It is extra flavorful with this marinade and grilling it just locks in all of the delicious juices.
- Side Dish:
- Mango Salsa – This is the ultimate summer salsa. Scoop it right on top of your tender and juicy chicken for the perfect weeknight meal.
- Cilantro Lime Rice – Pairs perfectly with mango salsa for dinner perfection.
Tuesday
- Main Dish: Tuscan Turkey Burgers – We are big fans of burgers in this house, especially in the summertime! This is a leaner version of your traditional burger that you will love.
- Side Dish:
- Herb Roasted Potatoes – With just a few minutes of prep you’re about to eat your new favorite side dish!
- Italian Quinoa Salad – This is a great addition to your burgers. It’s full of protein and will be great as a leftover for lunch the next day, too.
Wednesday
- Main Dish: 30 Min Beef Ramen Stir Fry – This is a fast, family friendly meal and you can customize your veggies depending on everyone’s preferences. Ramen is the cool thing to eat these days!
- Side Dish:
- Cucumber Tomato Salad – Keep it light with a cold, easy side salad. It’s a great compliment to your flavor packed ramen.
- Roasted Green Beans – A pan of roasted green beans is so good no matter how you season them. I like to glaze them with a homemade teriyaki sauce.
Thursday
- Main Dish: Enchilada Casserole – Mom hack – this dish is already super fast, but buy a rotisserie chicken and shred it for even quicker prep.
- Side Dish:
- Side Salad with Creamy Italian Dressing – Do not skip on making this creamy dressing!
- Doctored up Black Beans – These taste like they’ve been simmering all day! No one will ever guess that they started out with just a simple can of black beans.
Friday
- Main dish: Crock Pot Hot Dog Chili – What’s better – Only needing 10 minutes to prep a meal or having a good chili dog on a lazy summer night? These are such a great Friday night meal that will keep you from heating up your kitchen.
- Side Dish:
- The Easiest Macaroni and Cheese – Chili dogs and grandma’s mac? Your family will be clearing their plates in no time tonight!
- Summer Fruit Salad – This cool, refreshing salad is the perfect side for a summer meal.
- Dessert – Caramel Snickerdoodles – The caramel makes these snickerdoodles even more irresistible than you can imagine!
Appetizer
- Buffalo Chicken Roll Ups – Chicken roll-ups are quick to make and can be easily scaled to feed a crowd or just eat at home as a snack or a quick lunch.
