Family Meal Plan

Monday
- Main Dish: Big Mac Sliders – Forget about grabbing fast food! These are so much better.
- Side Dish:
- Potato Wedges – Like peanut butter and jelly, these potato wedges will be perfect with your sliders.
- Side salad – I like to use mixed greens, add a sprinkle of mozzarella, tomatoes, and my homemade ranch dressing. You can also add in whatever veggies you have on hand.
Tuesday
- Main Dish: Creamy Sun Dried Tomato and Basil Chicken – Just 20 minutes for a delicious, family-friendly dinner and this is a one pan meal!
- Side Dish:
- Side Salad with Lemon Vinaigrette – the dressing is SO GOOD!
- Roasted Asparagus – My favorite way to make asparagus.
- Pasta – spaghetti, penne, angel hair, any will work!
Wednesday
- Main Dish: Mexican Shredded Beef Bowls – This Mexican meal can be made just using your crockpot! You’re going to have enough for tonight *AND* for Friday!
- Side Dish:
- Mexican Rice or cauliflower rice – top your rice with the shredded beef that’s been cooking all day.
- Toppings – Sour cream, shredded lettuce, pico de gallo, black olives, guacamole, etc
- Jalapeno Ranch – This is my kids FAVORITE and it tastes amazing over top bowls.
Thursday
- Main Dish: Creamy Chicken and Rice Casserole – If you want a one dish meal that’s delicious, creamy and everyone will devour – this is it!
- Side Dish:
- Garlic Parmesan Broccoli – This recipe is super simple and our favorite way to eat broccoli.
- Perfect Oven Roasted Vegetables – There is no better way to eat your veggies.
Friday
- Main Dish: Mexican Beef Tacos – Using leftovers from Wednesday, your beef has been marinating and will make the most delicious tacos.
- Side Dish:
- Black Beans – My favorite trick for making canned beans taste amazing.
- Cilantro Lime Pasta Salad – The cilantro and lime make this an amazing side dish with your Mexican beef. You can also make this ahead to save time!
- Dessert – Peanut Butter Swirl Bars – We have been making these for seriously my whole life! They have a tender light peanut butter bar with the perfect swirl of rich chocolate throughout.
Appetizer
- Marinated Mozzarella – This is a family favorite! It’s a simple appetizer and always a big hit.
