Meal Plan – Week 265
*If you make a recipe this week and love it, please consider leaving a rating and comment on the recipe post. It helps to support my blog and makes my day!*
Monday
- Main Dish: Easy Chicken Piccata Casserole – Not your mama’s casserole! This is the best one pan dinner and still has all the fresh, citrusy flavors of chicken piccata.
- Side Dish:
- Sauteed Spinach – This is my personal favorite side when I make piccata.
- Garlic Mashed Potatoes – Put your chicken on top of mashed potatoes. This is my husbands favorite way to eat piccata!
Tuesday
- Main Dish: Creamy Tuscan Sausage Pasta – Everything you need for a wholesome meal in just 30 minutes!
- Side Dish:
- Italian House Salad – The perfect side for this creamy pasta dish.
- Garlic Cheese Bread – Everyone loves a cheesy loaf of bread, especially when you can soak up the extra pasta sauce with it.
Wednesday
- Main Dish: Firecracker Chicken – These tender chicken bites are quick to make and will probably disappear just as quickly if your family loves it as much as mine does.
- Side Dish:
- Sautéed Green Beans – Quick and easy in the skillet or you can make oven roasted green beans instead!
- Cilantro Lime Rice – I like to serve the chicken right over a bed of rice.
- Cauliflower Rice– If you want something light, this is a great option.
Thursday
- Main Dish: Philly Cheesesteak Casserole – If you have a pound of ground beef, this is a great way to use it. This is a crowd pleaser!
- Side Dish:
- Baked Potato Wedges – French fry wedges were made for this casserole.
- Classic Tomato Cucumber Salad – If you want something lighter, but still super flavorful this is a great salad.
Friday
- Main dish: Chicken Fajita Nachos – This is our favorite Friday dinner! I can seriously hide any vegetables in nachos, and my kids will eat every last bite.
- Side Dish:
- Easy Mexican Rice – For a full Tex-Mix dinner, add this rice as a side.
- Sautéed Peppers and Onions – Serve these alongside your nachos or use them as an additional topping.
- Dessert – Cinnamon Coffee Crumble Cake – Technically this is more of a breakfast recipe, but when you add a scoop of vanilla bean ice cream, you have dessert!
Appetizer
- Layered Greek Dip – This is ALWAYS a huge hit!
