Family Meal Plan
MONDAY
- Main Dish: Italian Grinder Sliders – These bite sized sliders are always a big hit in my house! You can make them for your family or even for a larger group because you can double the recipe.
- Side Dish:
- Rotini Pasta Salad – A refreshing pasta salad will go great with these sliders. And it’s great as leftovers for lunch the next day! While you’re at it, prep this Italian Dressing Mix so you have it on hand.
- Roasted Vegetables – Roast a medley of vegetables, such as zucchini, bell peppers, and eggplant, tossed in olive oil, garlic, and Italian seasoning.
TUESDAY
- Main Dish: Enchilada Casserole – This is already so simple, but if you buy a rotisserie chicken ahead of time and shred it, it’ll be even faster!
- Side Dish:
- Cilantro Lime Rice – This is the most delicious side!
- Mexican Style Crock Pot Refried Beans — Start the crockpot earlier in the day for your beans and whip up the enchiladas in the evening.
WEDNESDAY
- Main Dish: Chicken Zucchini Casserole – This is the best easy dinner for busy weeknights because it only has a handful of simple ingredients, and all bakes in one dish so clean up is a breeze!
- Side Dish:
- Garlic Bread – A big slice of my crusty garlic bread would be so delicious with this dish.
- Side salad with Balsamic Vinaigrette — Adding a salad is perfect to go with this.
- Cauliflower rice– You can do all cauliflower rice or do half and half with regular rice to lower the calories and carbs and get some extra veggies in.
THURSDAY
- Main Dish: Crockpot Tuscan Chicken – Once you taste this you will see why this recipe is one of the most popular on my website! It is easy, super quick to just dump and go, full of veggies and just plain delicious.
- Side Dish:
- Pasta- This can be served over your favorite pasta – I suggest spaghetti, fettuccine or egg noodles. Just cook, toss them with a little olive oil and garlic and serve the crockpot tuscan chicken right on top. You can also use zucchini noodles to keep it light.
- Parmesan Cauliflower Bites – This healthy side takes just a few minutes and is so yummy.
- Roasted Green Beans – Just a few ingredients to make these easy green beans. Perfect side dish if you’re looking to add a veggie as a side!
FRIDAY
- Main dish: Garlic Bread Pizza – We love pizza Fridays! I try to have a variety of toppings to choose from so that everyone can DIY their own. If you haven’t seen my big list of Pizza Topping Ideas, you need to!
- Side Dish:
- Homemade Ranch Dressing – If anyone knows a good ranch, it’s me. I always keep a jar of this in my fridge! Add this to a bowl with some veggies and your kids will keep asking for more.
- Antipasto Salad – A great way to add some protein!
- Dessert — Cinnamon Sugar Scones – Are these a breakfast item? A snack? A dessert? Whatever you decide on, these are amazing! Make some extra so you can freeze them and pop them out to bake whenever you are wanting more!
APPETIZER
- Cold Spinach Feta Dip– This dip requires no cooking and is filled with amazing flavor!
