Family Meal Plan
MONDAY
- Main Dish:
Crock Pot BBQ Brisket– This is awesome to make at the beginning of the week because of *leftovers*! Save some for Wednesday. 😉 The brisket can be shredded or sliced and covered with as much tangy barbecue sauce as you want! - Side Dish:
- Creamy Mashed Potatoes – My secret method makes these EXTRA creamy.
- Garlic Parmesan Roasted Broccoli – This recipe never fails in the delicious department.
- Classic Baked Beans – You can’t go wrong with the classic!
TUESDAY
- Main Dish: Crockpot Marry Me Chicken— Dump and go dinners that are full of flavor are an immediate yes for me. If you have any leftovers, this chicken is great on top of a salad for lunch!
- Side Dish:
- Easy Caprese Salad – I love this light and refreshing salad. Who knew something so simple could be so delicious! You can also make this Balsamic Vinaigrette to drizzle on the tomatoes and mozzarella.
- Lemon Rice – You can also use cauliflower rice to keep your dinner low-carb and a little lighter.
WEDNESDAY
- Main Dish: BBQ Brisket Tacos — Remember what you made on Monday? Use that leftover brisket to have tacos that are LOADED with flavor!
- Side Dish:
- Mexican Street Corn Casserole – One dish, no problem.
- Tortillas– Heat corn tortillas in a lightly oiled skillet. Once warm and pliable, pile on BBQ brisket.
- Toppings:
- Pico de gallo – Fresh, easy and perfect for these tacos.
- Jalapeño Ranch Dressing – you should always have this on hand because it’s THAT good!
- Cilantro
- Sour cream
- Cheese
- Sliced jalapeños
THURSDAY
- Main Dish: Baked Chicken Chilaquiles — Let’s switch things up for dinner and have breakfast. This is a new recipe and I seriously can not wait for you to try it!
- Side Dish:
- Mexican Style Crock Pot Refried Beans – Turn regular dried pinto beans into flavorful perfection with this recipe. They are perfect served alongside homemade chilaquiles.
- Guacamole – Fresh guac takes less than 10 minutes and is so good on top of chilaquiles!
- Diced onion and a lime wedge are also great toppings.
FRIDAY
- Main dish: Hawaiian Roll Cheeseburger Sliders—Perfect little handheld delights that have everyone happy on a Friday! So many of you have made these and are freaking out over how easy and delicious they are!
- Side Dish:
- Baked Potato Wedges — French fries without (too much) guilt!
- Side Salad with Homemade Buttermilk Dressing – With just a few simple ingredients you will be serving a restaurant quality salad.
- Dessert — Crockpot Peach Cobbler—This is going to become your go to summer dessert!
APPETIZER
- Greek Layer Dip – This is a great healthy appetizer that feeds a crowd.
