Family Meal Plan
MONDAY
- Main Dish: Ground Chicken Stuffed Peppers – A healthy weeknight dinner your kids will actually want to eat? Yes, please! The ooey-gooey cheese that the ground chicken mixture is topped with will certainly make every kiddo happy!
- Side Dish:
- Side Salad with Homemade Buttermilk Dressing – With just a few simple ingredients you will be serving a restaurant quality level salad. **Make extra so you can use it later this week for another veggie side dish**
- Tomato Basil Mozzarella Salad – The side salad would be perfect, but if you’re hoping for something a little fancier, this mozzarella salad is so good!
TUESDAY
- Main Dish: Classic Sausage and Peppers—The original one pan meal! This is a go-to family meal that I frequently reach for because it comes together quickly, includes all easy ingredients and cleanup is so easy because of that trusty skillet.
- Side Dish:
- Italian Quinoa Salad— Keep it light with this salad that is protein packed and full of veggies. I’d suggest making this ahead of time. Not only will that save you even more time today, but the flavors get absorbed and are even better when the quinoa has marinated for a day!
- Hoagies — The most traditional way to serve sausage and peppers! Grab a hoagie roll, toast it if you’d like, then cut it in half and spoon a big serving of sausage, peppers and onion.
- Rice — Serve the sausage and peppers right on top of rice.
WEDNESDAY
- Main Dish: Baked Ziti with Ground Turkey — We’ve kept this recipe traditional and delicious so that everyone is happy, but we lightened it up with the ground turkey and it is YUM! Easy prep makes it quick enough for the busiest weeknights, or it can even be prepped ahead!
- Side Dish:
- Garlic Bread– This recipe is our go to! The secret is in the spread.
- Buttermilk Ranch Dressing — You made this earlier in the week, so serve alongside some cucumbers, tomatoes and carrots and your kids will devour them.
THURSDAY
- Main Dish: Jalapeño Popper Chicken—Chicken breast, cream cheese, jalapeños, cheese and the perfect amount of BACON. You will love this!
- Side Dish:
- Buttermilk Cornbread— The cooking method in this recipe is what creates THE cornbread that all other homemade cornbreads aspire to be!
- Ranch Smashed Potatoes — These are so delicious and would pair perfectly with the Jalapeño Popper Chicken.
- Sautéed Spinach — This is an excellent low carb option if that’s what you’d prefer. Enjoy!
FRIDAY
- Main dish: Chicken Tinga Tacos—These tacos are made in the crockpot and are beyond tasty! Kids will enjoy assembling their own tacos on a Friday night. The great thing about these chicken tinga tacos is that you can control how spicy they are so that everyone will be able to enjoy!
- Side Dish:
- Crockpot Refried Beans — This is the easiest and most delicious way to make homemade beans. If you only have one crockpot, just make these a few days ahead of time and reheat.
- Mexican Rice — This recipe nails the authentic flavor and can go head to head with the rice from your favorite restaurant any day!
- Dessert – Cinnamon Glazed Butter Cookies — If I didn’t have you at “butter” maybe the cinnamon got you! Hurry up and make these so you can eat them all week!
APPETIZER
- Mexican Spinach Dip — This fun twist on traditional spinach dip is surprisingly addictive and will have people begging for your recipe!
