Meal Plan – Week 207
MONDAY
- Main Dish: White Lasagna with Spinach – This vegetarian dish was inspired by my favorite dish I ate while on my unforgettable food tour of Israel. This casserole is packed with satisfying flavors and you seriously will not miss the meat in this lasagna!
- Side Dish:
- Garlic Roasted Veggies – This is the easiest side dish ever!
- Side Salad with Creamy Italian Dressing — Trust me, you WANT to make the dressing.
- Crispy Roasted Brussels Sprouts — You’re going to love how these crisp up in the oven.
TUESDAY
- Main Dish: Pepper Steak Stir Fry — Sometimes all you have during the week is 15 minutes to throw a meal together. You’re in luck with this delicious one pan meal of tender, quick-cooking steak, bell peppers, and an irresistible sweet and salty Asian inspired sauce!
- Side Dish:
- Asian Cucumber Salad — This salad is so crisp and refreshing. A great side if you’re hoping to keep it light.
- Rice —Steamed white or brown rice, or even another grain like quinoa or farro make a great option that will soak up the extra sauce.
WEDNESDAY
- Main Dish: Perfect Baked Chicken — This baked chicken makes a delicious easy dinner, or can be shredded or chopped to use for meal prep. Which is what we’re going to do. **Make extra so that you can repurpose it for Friday!**
- Side Dish:
- Mashed Sweet Potatoes — These are too good to not eat year round! This recipe is fantastic for those who like that sweet and savory combination.
- Baked Asparagus — Roasting asparagus is the easiest and tastiest way to bring out the delicious flavor and crispness.
THURSDAY
- Main Dish: Cheeseburger Pasta — This is one of our favorite family meals and it comes together in just one skillet and packs a powerful punch for taste!
- Side Dish:
- Tomato Basil Mozzarella Salad — I LOVE how simple this is to make, but is still full of flavor!
- Sautéed Spinach — If you’re wanting a healthy side to help round out your meal, this is it! You can serve it on the side or even mix it within your pasta dish.
FRIDAY
- Main dish: Chicken Enchilada Casserole — Use up the leftover chicken from Wednesday and you’ll have an irresistible dinner on the table in no time!
- Side Dish:
- Mexican Cornbread — Everybody loves cornbread, and this version pairs perfectly!
- Mexican Style Crock Pot Refried Beans — Start the crockpot earlier in the day for your beans and whip up the enchiladas in the evening.
- Dessert – Peanut Butter Chocolate Chip Cookies — Thick, chewy, and perfectly crispy edges – your family will devour these so make sure you taste test before they’re gone!
APPETIZER
- Avocado Corn Salsa — This is a great healthy dip that is loaded with of flavor. You will love how easy this is.
