Family Meal Plan
MONDAY
- Main Dish: Creamy Dijon Chicken – With simple ingredients, and one pan you can have this family friendly dinner ready to serve in just 20 minutes. This delicious chicken feels fancy, but it is so easy.
- Side Dish:
- Garlic Parmesan Broccoli – These little broccoli bites are easy enough that they often are our go-to for a side dish on a busy night. The combination of garlic and parmesan on these roasted veggies is perfect with the mustard sauce.
- Garlic Smashed Potatoes – These are a family favorite and for good reason! These little potatoes are tender on the inside and crispy on the outside. They’re everything a potato should be and that’s why everyone will love these!
TUESDAY
- Main Dish: Slow Cooker Beef Barbacoa – Beef Barbacoa tacos are always a hit! The seasoning in this slow cooker recipe is great, but I have perfected it with my new Barbacoa Seasoning. When you make your beef in the slow cooker, skip the seasoning recipe that is included in the slow cooker recipe and instead use the new one – use 1 tbsp per pound of beef that you are cooking. **Make sure to save extra barbacoa for leftovers on Thursday!**
- Side Dish:
- Doctored up Canned Black Beans – This easy method makes canned black beans taste like you’ve been slow cooking them all day!
- Tortillas – Make slow cooked barbacoa into tasty tacos with either corn or flour tortillas and toppings like sauteed peppers and onions, homemade guacamole, or an easy Pico de Gallo.
WEDNESDAY
- Main Dish: Baked Panko Chicken with a Honey Drizzle – This might just become your favorite chicken recipe. The chicken has the perfect combination of tender and juicy on the inside and perfectly crispy on the outside!
- Side Dish:
- Garlic Bread – If you’ve been here awhile then you know how much I love garlic bread. This garlic bread is irresistible and you’ll understand after you make it with my secret ingredient!
- Perfectly Roasted Veggies – This is one of the easiest side dishes to make, but they are packed with so much flavor!
THURSDAY
- Main Dish: Seasoned Barbacoa Nachos – You enjoyed the barbacoa seasoned tacos the other day, so now you get to enjoy the leftovers with your nachos! Nacho night always means my kids will have clean plates because it’s their favorite dinner.
- Side Dish:
- Easy Homemade Salsa – This blender salsa recipe uses canned tomatoes but tastes fresh! It takes just 5 minutes to make, tastes delicious and you can save the extra salsa in the fridge for a weekend snack!
- Easy Guacamole – Are they even nachos without the guac?
- Sour Cream
- Shredded Cheddar Cheese
FRIDAY
- Main dish: Spring Chopped Salad with Pomegranate Dressing – I had the most delicious salad while in Israel and when I came home I kept craving it. I knew I had to recreate it and if you are a salad lover, you will definitely want to try this! And if you aren’t a salad lover, you might be after making this. This only takes a few minutes to mix together and is hearty enough to be be served as is!
- Side Dish:
- Perfect Baked Chicken Breast – Tender, juicy, and flavorful chicken breast is exactly what you could add if you’re wanting to bulk up this salad a little more. Try my tips for the easiest chicken!
- Greek Chicken and Cauliflower – You could add this as a side or even mix it right in with your salad. This would pair perfectly with the freshness of your salad.
- Dessert – White Chocolate Macadamia Nut Cookies – These freezer really well. You can freeze them individually to pop in lunchboxes throughout the week!
APPETIZER
- Green Chile Dip – With only 5 ingredients plus salt and pepper you can have this super creamy dip from the fridge to the oven in minutes. You will feed a crowd with this delicious Green Chile Dip!
