Family Meal Plan
MONDAY
- Main Dish: Creamy Beef and Shells – This has all the flavors of Hamburger Helper, but healthier! You can throw it together in 30 minutes and feed a crowd!
- Side Dish:
- Oven Roasted Veggies – Throw these into the oven before you start making your pasta and they’ll both be done at the same time. You’ll look like a pro on a busy weeknight!
- Buttery Garlic Bread – Creamy Beef and Shells is definitely a comfort food, so you should add this garlic bread as a side to make it even more satisfying!
TUESDAY
- Main Dish: Caprese Chicken – With just 4 simple ingredients and one dish you can have this meal on the table in 40 minutes. You might start having this dish on your regular rotation!
- Side Dish:
- Boursin Mashed Potatoes – These mashed potatoes are a classic, but we jazzed them up with Boursin garlic and herb cheese which makes these extra creamy and delicious….*chef’s kiss*.
- Kale Salad – The parmesan and easy lemon vinaigrette makes this salad irresistible and one that we frequently make!
WEDNESDAY
- Main Dish: Chicken and Spinach Enchiladas with Sour Cream Sauce – These enchiladas are simple, packed with flavor, and come together in just a few minutes. This is the recipe you’ve been looking for!
- Side Dish:
- Mexican Rice – This EASY Mexican style rice tastes just like the sides you get at your favorite Mexican restaurant! Plus, you only need one skillet to make it, so clean up tonight will be easy peasy.
- Tableside Guacamole – You won’t believe how simple it is to make restaurant quality (actually, it’s better!) guacamole! We love this side because it uses everyday ingredients that you may already have on hand.
THURSDAY
- Main Dish: Butter Chicken – My son requested this for his 13th birthday meal recently! When I shared it on my Instagram stories so many of you requested the recipe. It is so easy – just one pot and 20 minutes until you have a delicious Indian meal.
- Side Dish:
- Naan – Most grocery stores (even smaller ones like Trader Joe’s) carry Naan, a traditional Indian bread. It will remind you of pita bread, but it is much fluffier. Just broil the Naan for a few minutes in your oven so that it’s warm and maybe even a little crispy. It’s the perfect tool to wipe up any extra sauce leftover when you finish your Butter Chicken!
- Lemon Rice or Plain Basmati Rice – This simple lemon rice recipe will compliment your Butter Chicken so well. It will soak up all of the yummy Indian flavors.
- Sautéed Spinach – This is less traditional, but every bit delicious! I like to serve my Butter Chicken on top of spinach instead of rice to keep the meal a little lighter. Great option for those that are on low carb diets!
FRIDAY
- Main dish: Garlic Bread Pizza – Pizza on Friday is our favorite. So simple and everyone loves it! We like to have a variety of toppings out so that everyone can DIY their own. If you haven’t seen my big list of Pizza Topping Ideas, you need to!
- Side Dish:
- Italian Rotini Pasta – You can make this ahead of time and bring it out for dinner!
- Homemade Ranch Dressing – Add this to a bowl with some veggies and your kids will keep asking for more. I always keep a jar in my fridge!
- Dessert – Fudge Brownies – This is one of my “signature” desserts people are always asking me to make. They are the PERFECT brownie!
APPETIZER
- Marinated Mozzarella Balls – These are delicious enough to stand alone or added to a cheese board. Whatever you do, you will not be disappointed when you taste these!
