Family Meal Plan
MONDAY
- Main Dish: – Chicken Tetrazzini– The best word I can come up with to describe this recipe is LUSCIOUS! It is loaded with tender pasta, flavorful veggies, shredded chicken and the most luscious cream sauce. It feels super fancy to be honest, but it is surprisingly easy to make. This is definitely a crowd pleaser!
- Side Dish:
- Side salad with Italian Dressing– a simple salad with lettuce, tomato, cucumber, and maybe some cheese on top is the quickest side and a perfect pairing. I always say take the extra 5 min to make the dressing, it will make the salad absolutely delicious!
- Pesto Bread– Nothing more delicious than some cheesy bread!
TUESDAY
- Main Dish: – Crockpot Beef Barbacoa– 2-for-1 recipe!! Let the slow cooker do the work on this absolutely tender, juicy, flavor loaded roast. I love to serve this dish bowl style the first night and save the extras for a super quick and easy dinner later in the week.
- Side Dish:
- Homemade Refried Beans– So easy and makes plenty to freeze for later!
- Mexican Style Rice– This seriously tastes like it came from a Mexican restaurant! So good!
WEDNESDAY
- Main Dish: Easy Cheesy Lasagna Skillet– This one skillet meal is a winner when you want that cozy, familiar flavor of lasagna, but have time for none of the work! It takes the the best flavors and cooks them all up in a super quick, not-so-messy meal. I like to serve over pasta for that lasagna flavor, but you can keep it light by doing bowls, or a pasta substitute like zoodles.
- Side Dish:
- Garlic Vegetable Medley– This is one of my most popular side dish recipes! It is quick and so so delicious.
- Pasta– Use whatever pasta you have on hand or your family likes. Some brands sell mini “lasagna noodles” but those are necessary. The flavors will be the same.
THURSDAY
- Main Dish: Beef Barbacoa Burrito– Meal 2 in our “2-for-1” we made earlier this week! Grab the extra beef barbacoa from the fridge to make these kid-favorite loaded beef burritos for an extra easy dinner.
- Sides:
FRIDAY
- Main dish: Saucy Buffalo Chicken Tenders– These are not only delicious and easy, but great for reheating while you watch the game this weekend! They have no breading, but are packed with flavor to make them light and easy to make!
- Side:
- Hashbrown Casserole– These cheesy potatoes are the ultimate comfort food!
- Carrots, celery and ranch dip– Take the extra 5 minutes and make the ranch! It is SO GOOD!
- Dessert – Cranberry Oatmeal Cookies– The perfect holiday cookie! If you plan ahead, soak the cranberries for even more flavor (directions in the recipe!)
APPETIZER
- Green Chile Cheddar Dip– This warm cheesy dip is packed with southwest flavors! Perfect for dipping chips and veggies in for a hearty snack.
