I’ll be the first to admit that lasagna is one of those recipes that always hits the spot, but the layers, the baking, the juggling of multiple pans? Sometimes it feels like a full production. That’s why I love these lasagna roll ups! 

You still get the cheesy, saucy goodness we all crave, but in a faster, family-friendly package. They look fun on the plate, too, which means even picky eaters are more likely to dig in.

  • It’s lasagna, but easier – No layering gymnastics here! Just roll, bake, and eat..
  • Creamy meets tomatoey – The spinach chicken cream sauce tucked inside balances beautifully with the marinara on top.
  • Great for meal prep – You can assemble these ahead of time and bake when you’re ready, or freeze for later.
  • Crowd pleaser every time – Cheese, pasta, and chicken… need I say more?

This chicken lasagna roll ups recipe is as simple as promised! Just 15 minutes of prep, and the oven will do the rest!

In this section I am going to go through a few tips and tricks I use for how to make Creamy Spinach Chicken Lasagna Roll Ups to get the absolute best and most delicious results.

Ingredients + Substitutions

Ingredients needed to make creamy spinach chicken lasagna rolls ups lined up on a wooden background.
  • Lasagna noodles – Regular noodles work perfectly, but you can swap in oven-ready if you par-boil them first.
  • Spinach – Frozen spinach is easiest here. Fresh spinach works too, just sauté and drain well.
  • Chicken – Shredded rotisserie chicken keeps it quick, but any cooked chicken breast or thighs will do.
  • Heavy cream + parmesan – For the creamy sauce. You can sub half-and-half and add extra parmesan if you prefer.
  • Marinara sauce – Store-bought or homemade. Choose your favorite!
  • Mozzarella cheese – For that gooey topping.

  • Spinach Sausage Lasagna Roll Ups – Replace the shredded chicken with ground Italian sausage, or your favorite protein!
  • Vegetarian Lasagna Roll Ups – Skip the chicken entirely! If you want a little more structure in the filling, add in some ricotta cheese.

Recipe Step by Step

I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make chicken spinach lasagna.

Cook noodles to al dente. Drain and cool. Sauté the onion for 4-6 minutes until translucent at medium heat. Stir in salt, pepper, and nutmeg. Add garlic, and sprinkle with flour. Stir and cook about 1 minute. Add the heavy cream and stir until it starts to simmer.

Dollop the spinach mixture down the length of the noodle with a spoon, then spread it out. Start at one end of the noodle and roll it up. Repeat until all 10 lasagna noodles have been filled.

Spread several spoonfuls of marinara in the bottom of the baking dish. Place the lasagna rolls in the dish seam side down.

  1. Drain your spinach like you mean it – Extra water makes the filling runny, so make sure you drain it well after it thaws!
  2. Don’t skip the nutmeg – It’s the secret flavor booster in creamy spinach sauces.

If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!

  • Rotisserie chicken – Use rotisserie chicken instead of making your own. This is the best option to keep it as easy as possible!
  • Jarred tomato sauce – I recommend using your favorite jarred marinara so you don’t have to make your own.
  • Prep ahead – To save some time on the day of, you can definitely prep these roll ups up until baking. Wrap the baking dish in plastic wrap and keep it in the fridge for up to 1 day before baking as normal!

To freeze before cooking

  1. Assemble the roll ups in a dish without baking.
  2. Cover tightly with plastic wrap and foil.
  3. Freeze for up to 6 months.

  1. Let roll ups cool completely.

Ingredients 

For the creamy spinach chicken filling

  • 3 tablespoons butter
  • 1/2 yellow onion , finely diced
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/2 teaspoon nutmeg
  • 2 cups heavy cream
  • 1/2 cup finely grated parmesan cheese
  • 24 ounces frozen spinach, thawed and squeezed dry
  • 3 cups shredded chicken

For the Lasagna Roll Ups

  • 10 lasagna noodles, (see note)
  • 16 ounces marinara sauce
  • 1 cup shredded mozzarella cheese

Garnish (optional)

  • fresh chopped parsley

Instructions 

  • Preheat oven to 375˚F.
  • Cook lasagna noodles to al dente per package directions.
    Once done, drain and fill with cold water until ready to use.
  • While the noodles are cooking, heat butter in a large skillet over medium high heat.
    Add onion, and cook 4-6 minutes until translucent. Stir in salt, pepper, and nutmeg. Add garlic, and sprinkle with flour. Stir and cook about 1 minute.
  • Add the heavy cream and stir until it starts to simmer. Stir in the parmesan cheese, chopped spinach, and chicken. Continue to simmer until thickened, then remove from heat.
  • Spread the lasagna noodles flat (if you filled the pot with cold water, drain before doing this.)
    Dollop the spinach mixture down the length of the noodle with a spoon, then spread it out.
  • Start at one end of the noodle and roll it up. Repeat until all 10 lasagna noodles have been filled.
  • Spread several spoonfuls of marinara in the bottom of a 9×13 inch baking dish. Place the lasagna rolls in the dish seam side down. Pour the remaining marinara over the lasagna rolls, and top with cheese.
  • Bake for 20 minutes, then remove and garnish with chopped parsley if desired. Serve warm.

Recipe Notes

This recipe only uses 10 lasagna noodles, but I like to cook about 15 so that if any tear or break, I will have whole ones to make the lasagna roll out of.
This is also the reason I like to fill the pot with cold water if I am not immediately ready to use the noodles when they are done cooking. Sitting in water helps to keep them from sticking, tearing, or creasing.
Substitutions: You can swap the chicken for ground sausage or shredded turkey! Fresh spinach works in place of frozen, just cook, drain, and chop it first.
How to Store: Keep leftovers in an airtight container in the fridge for 3–4 days. They reheat beautifully for quick meals.
How to Freeze: Freeze assembled but unbaked roll ups for up to 6 months, or freeze cooked portions for up to 3 months. Always wrap tightly to prevent freezer burn.
How to Reheat: Warm in the oven at 350°F until heated through, or use the microwave for a faster option. Add a splash of extra sauce if they seem dry.
How to Scale: This recipe doubles easily if you’re feeding a crowd, or cut it in half to make just enough for a small family dinner.
