Monday
- Main Dish: Crockpot Beef Manhattan – Tender, fall-apart beef in a rich gravy that cooks itself all day. Serve it over mashed potatoes or bread and it’s pure comfort food.
- Side Dish:
- Easy Creamed Spinach – Steakhouse flavor without the steakhouse price tag! It’s rich, creamy, and way easier than it looks.
- Steakhouse Style House Salad – This is the perfect light contrast to a cozy dinner.
Tuesday
- Main Dish: Cajun Chicken Pasta – Creamy with just the right amount of spice, and it comes together fast enough for a busy weeknight. Dial the heat up or down to suit your crew.
- Side Dish:
- Easy Garlic Bread – Because you can’t have creamy pasta without something to soak up the sauce.
- Cajun Roasted Vegetables – A zesty, no-fuss way to get your veggies in. Toss them on a pan and let the oven do the work.
Wednesday
- Main Dish: Chicken Cordon Bleu – This casserole version is the only way I make cordon bleu now! It’s so much faster than the classic and just as flavorful.
- Side Dish:
- Herb Roasted Potatoes – These are probably going to be your new go-to side dish! They go with practically every main dish.
- Pasta– Serve the casserole alongside a pile of pasta, or spoon it right over the top of your favorite kind.
Thursday
- Main Dish: Southwest Beef Fried Tacos – Juicy ground beef and melty cheese are great in a taco, but frying them takes things to a whole new level. Shake up taco night with these!
- Side Dish:
- Mexican Corn Salad – Sweet, creamy, and a little zesty. It’s a great fresh bite next to a crunchy taco.
- Crockpot Refried Beans – Some people say these creamy, flavorful beans beat the ones at their favorite Mexican restaurant. I’ll let you be the judge!
Friday
- Main Dish: Ground Turkey Stir Fry – Even the pickiest eaters will clean their plates. Faster than takeout and a lot easier on the wallet.
- Side Dish:
- Asian Cucumber Salad – Another make ahead side dish! Work smarter, not harder.
- Yum Yum Sauce or Spicy Mayo – If you like a little heat, go with the spicy mayo. If not, the yum yum sauce is your friend. Both are super simple to whip up.
- Dessert – Caramel Snickerdoodles – Adding caramel makes these snickerdoodles even more irresistible than you’d imagine.
Appetizer
- Caramelized Onion Dip – Make the caramelized onions in the crockpot, then blend 2 cups of them with 16 oz of sour cream. It’s the easiest dip ever. Just serve it with potato chips and enjoy it during your next game day.
