Monday
- Main Dish: Crockpot Green Chicken Enchiladas – This is an EASY dinner to get going early and forget about until it’s time to eat!
- Side Dish:
- Mexican-Style Rice – You need this rice next to your enchiladas! It’s flavorful, fluffy and so much better than plain rice. My family always goes back for more.
- Crockpot Refried Beans – Making refried beans in the crockpot is such a game changer. They’re creamy, flavorful and ridiculously easy to make!
Tuesday
- Main Dish: Sheet Pan Chicken Fajitas – If anyone has been a follower for even a minute, they probably know I make these on the regular! Everything cooks together on one sheet pan, and the leftovers are just as good the next day.
- Side Dish:
- Guacamole – Because chicken fajitas without guacamole? Absolutely not. This one is fresh, creamy and takes just minutes to make.
- Pico de gallo – Fresh tomatoes, onion, cilantro and lime make this the perfect little topping for fajitas. And honestly, I could eat it with a pile of tortilla chips and call it dinner.
Wednesday
- Main Dish: Chili Dog Sliders – Okay, these are FUN. All the flavors of a chili dog packed into an easy slider that the whole family can grab and go. My kids are always excited when these hit the dinner table!
- Side Dish:
- Oven Baked Potato Wedges – Crispy on the outside, fluffy inside and absolutely made for dipping. Put these next to chili dog sliders and you have yourself a very happy dinner table.
- Easy Macaroni and Cheese – Because apparently chili dogs needed a side of mac and cheese too. I’m not mad about it. This one is creamy, cheesy and always a kid favorite.
Thursday
- Main Dish: Curry Chicken Salad – This chicken salad is SO good and the curry flavor makes it anything but boring.
- Side Dish:
- Mediterranean Chickpea Salad – This is an easy side to have ready in the fridge and it goes so well with the curry chicken salad.
- Naan, lettuce or croissant – My favorite way to serve the chicken salad is piled onto a buttery croissant, but naan or lettuce leaves are both delicious too. Pick your dinner adventure!
- Fruit Salad – The sweet fruit is exactly what this meal needs to balance out those curry flavors. Plus, it’s fresh, easy and always disappears fast!
Friday
- Main Dish: Sheet Pan Cheesy Sausage and Tortellini – Well guys, it’s Friday and I have a sheet pan dinner for you. Sausage, cheesy tortellini and all the good stuff baked together on one pan. YES PLEASE.
- Side Dish:
- Italian House Salad – You need something fresh next to all that cheesy tortellini! This simple Italian salad is an easy way to get some greens on the table without making dinner complicated.
- BEST Garlic Bread – There was never a question about garlic bread making the Friday night menu. Especially when cheesy tortellini is involved. You NEED something to soak up all that sauce!
- Dessert – Peanut Butter Blondies – If you are a peanut butter dessert person, SAVE THIS ONE. These blondies are soft, chewy and packed with peanut butter flavor. My kind of Friday night dessert!
Appetizer
- Crockpot Lil Smokies – It’s football season and these are a MUST! Toss everything in the crockpot, let them hang out and you’ve got an easy appetizer everyone will keep coming back for.
