Family Meal Plan
Week 379

Monday
- Main Dish: Crockpot Chicken Enchilada Casserole – This is a brand new recipe and it’ll continue to be in the rotation whenever life gets busy! Toss everything in the crockpot, let it do its thing, and dinner is ready when you are.
- Side Dish:
- Easy Mexican Rice – So much better than the boxed version and it all comes together in one pan.
- Black Beans – Once you make these, canned beans just don’t hit the same. I always freeze the leftovers because work smarter not harder!
Tuesday
- Main Dish: Chimichurri Flank Steak – The chimichurri completely steals the show here. My husband requests this one all the time, and I can’t blame him.
- Side Dish:
- Oven Roasted Vegetables – Easy, colorful, and they go with just about everything.
- Pineapple Jalapeño Salsa – Sweet with a little kick. I could honestly eat this with a spoon.
Wednesday
- Main Dish: Ground Chicken Stir Fry – This is one of my favorite busy-night dinners because it’s on the table fast and everyone actually eats it. I usually double it so lunches are handled too.
- Side Dish:
- Sriracha Slaw – Crunchy with just enough kick to keep things interesting.
- Steamed or Fried Rice – You really can’t go wrong here. Jasmine rice is usually what ends up on our table.
- Noodles – If your family loves takeout, try serving this with ramen or lo mein noodles. My kids get so excited when I do.
Thursday
- Main Dish: Crockpot BBQ Chicken – Three ingredients and about two minutes of effort? Yes, please. This is one of those recipes I lean on all year long, and you’ll definitely want to make extra because tomorrow’s dinner is basically already done.
- Side Dish:
- Macaroni and Cheese – My grandma’s baked mac and cheese will forever be my favorite side with BBQ.
- Cucumber Tomato Salad – Fresh, simple, and a great way to balance out all that cheesy goodness.
Friday
- Main Dish: BBQ Chicken Nachos – Leftovers never looked this good. Pile that BBQ chicken onto chips with all your favorite toppings and watch everyone race to the table.
- Side Dish:
- Crockpot Refried Beans – Scoop them on the side or load them right onto your nachos. I usually do both.
- Sauteed Green Beans – A quick veggie that rounds out dinner without adding much work.
- Dessert – Key Lime Cookies – These are bright, soft, and completely impossible to eat just one! Every time I make them, someone asks me for the recipe.
Appetizer
- Mexican Spinach Dip – If you’re bringing an appetizer somewhere this week, make this one. It’s creamy, packed with flavor, and people always ask, “Wait…what’s in this?” before going back for another scoop.
