Family Meal Plan

Monday
- Main Dish: Ground Beef Enchiladas – My husband calls this one a “make it again immediately” dinner. Cheesy, saucy, and always a hit with the kids. I usually wish I had made extra because the pan is basically empty in minutes.
- Side Dish:
- Mexican Rice – Simple side that pulls everything together and soaks up all that enchilada sauce perfectly.
- Easy Refried Beans – These cook right in the crockpot and taste way better than canned. I love having something this easy in the rotation.
Tuesday
- Main Dish: Fettuccini Alfredo with Blackened Chicken – This one feels a little extra in the best way. The blackened chicken brings so much flavor, and if you add a little homemade pesto on top like I do, it gets even better! My kids love the creamy pasta and my husband goes back for seconds every time.
- Side Dish:
- Garlic Bread – Crispy edges, buttery center, and honestly non-negotiable with Alfredo at my house. You could also add a drizzle of pesto to this!
- Italian House Salad – Fresh, simple, and balances out the richness of the pasta.
Wednesday
- Main Dish: Crockpot Huli Huli Chicken – All the tropical flavor without standing over a grill. This one smells amazing while it cooks and my family gets very excited when they realize it’s on the menu.
- Side Dish:
- Vegetable Fried Rice – A great way to use up extra veggies and stretch the meal even further.
- Oven Roasted Vegetables – Easy side that adds color and crunch to the plate.
Thursday
- Main Dish: Crockpot BBQ Brisket – Texas girl approved and shockingly easy for how good it turns out. I love that it cooks all day and basically takes care of dinner for you. Also, save the leftovers because Friday is already planned.
- Side Dish:
- Classic Creamy Coleslaw – Cool, creamy, and exactly what you want next to BBQ. My husband piles this on his plate!
- Crispy Smashed Potatoes – These are a total favorite around here. Crispy edges and soft centers every time.
- More side dish ideas – I put together a full list of sides that work perfectly with BBQ if you want to mix things up or use what you already have.
Friday
- Main Dish: Brisket Tacos – Using Thursday’s leftovers makes this feel like a total win. My kids love taco night and some might say are even better than the original brisket!
- Side Dish:
- Mexican Street Corn Casserole – Creamy, cheesy, and always the first side gone.
- Tortillas – You can grab store-bought or make your own if you’re feeling it. Either way, these tacos are about to disappear fast. Have your kids help if you make them because they’re surprisingly easy.
- Toppings:
- Pico de gallo – Fresh, easy and perfect for these tacos.
- Jalapeño Ranch Dressing – Drizzle this on all the things!
- Cilantro
- Sour cream
- Cheese
- Sliced jalapeños
- Dessert – Crockpot Peach Cobbler – This is the dessert that makes summer feel easy. Warm, sweet, and so simple to throw together you’ll want to keep it on repeat.
Appetizer
- Buffalo Chicken Roll Ups – My kids treat these like snacks and my husband basically stands by the plate until they’re gone 😅
