Family Meal Plan

Monday
- Main Dish: BBQ Chicken Marinade – This marinade is one of my favorites because it makes grilled chicken taste SO good with barely any extra effort. We use this all summer long and I always throw on extra for lunches the next day.
- Side Dish:
- Creamy Southern Coleslaw – Cold, crunchy, and exactly what you want next to BBQ chicken. I could eat this straight out of the bowl.
- Garlic Smashed Potatoes – The crispy little edges are the best part!
Tuesday
- Main Dish: Ground Beef Stir Fry – This is one of those “I need dinner FAST” meals that still feels like a real dinner. The sauce is so good and I love that I can toss in whatever veggies need to be used up.
- Side Dish:
- Steamed Rice – Rice soaks up all that stir fry sauce and makes the whole meal extra filling. I usually use whatever rice I already have on hand.
- Asian Cucumber Salad – Fresh, crunchy, and so easy if you prep the dressing ahead of time. It balances the stir fry perfectly.
- Sauce Drizzle – My family gets very passionate about sauces, so we always put out yum yum sauce and spicy mayo and let everyone drizzle away.
Wednesday
- Main Dish: Baked Chicken Gyros – These are fresh, flavorful, and it feels kind of fun to eat. My kids love loading theirs up and I love that the chicken is super easy to prep.
- Side Dish:
- Mediterranean Chickpea Salad – Toss this together in minutes and dinner instantly feels brighter and fresher.
- Sauteed Green Beans – I make these constantly because they just go with everything.
Thursday
- Main dish: Italian Sausage Tortellini Skillet – This is one of those dinners I know everyone will eat without complaints. One pan, cheesy tortellini, sausage, and sneaky veggies feels like a solid parenting win to me.
- Side Dish:
- Garlic Bread – I mean… you can’t have a skillet full of saucy tortellini and NOT make garlic bread.
- Caprese – Fresh tomatoes, basil, and mozzarella make this feel a little extra without adding extra work.
Friday
- Main Dish: Classic Taco Salad – One of the only salads my kids get genuinely excited about. Once you add taco toppings into the mix everyone suddenly loves lettuce. Funny how that works.
- Side Dish:
- Guacamole – I pile this right on top and call it a good decision. It tastes just like restaurant guacamole and takes the whole salad up a level.
- Ranch – If you have 5 minutes, make the homemade ranch. Store bought just cannot compete.
- Dessert – Soft and Thick Sugar Cookies – These are giant bakery-style cookies that feel special every single time. Add buttercream frosting and good luck keeping people out of the kitchen.
Appetizer
- Goat Cheese and Fig Puff Pastry Bites – These are secretly so easy. Sweet, salty, flaky little bites that disappear ridiculously fast every time I make them!
