Family Meal Plan

Monday
- Main Dish: Baked Rotisserie Chicken – This is one of those nights where you feel like you have it together. Super easy, super flavorful, and you already know tomorrow’s dinner is basically handled too because you’re going to save the extras!.
- Side Dish:
- Garlic Smashed Potatoes – Crispy edges, soft centers, and somehow everyone suddenly needs seconds. I always wish I made more!
- Black Bean and Corn Salsa – Spoon this right over the chicken and it takes everything up a notch. Fresh, a little zippy, and makes dinner seem way more exciting.
Tuesday
- Main Dish: Baked Chicken Spaghetti – Using yesterday’s leftovers and turning it into THIS? I feel like a genius every time!
- Side Dish:
- The Best Garlic Bread – There is a reason this is called the best. It’s buttery, crispy, and disappears before you can even sit down.
- Roasted Mixed Veggies – Throw them on a pan and call it done. Easy win.
Wednesday
- Main Dish: Panko Cheddar Chicken – Golden, crispy, cheesy chicken that looks like you worked way harder than you did. Add that fresh pico on top and suddenly dinner feels fancy.
- Side Dish:
- Italian House Salad – Quick, fresh, and balances everything out without extra effort.
- Parmesan Broccoli – Roasted with parmesan so it actually gets eaten without complaints. That alone is a win.
Thursday
- Main dish: Crockpot BBQ Brisket – Set it and forget it and then act like you spent all day on it. This one smells amazing and everyone will be hovering by dinner time. Try my easy born and raised BBQ sauce!
- Side Dish:
- Coleslaw – Cool and crunchy and exactly what you want next to BBQ.
- Cowboy Baked Beans – Hearty, a little sweet, and always one of the first things gone.
Friday
- Main Dish: Ground Turkey Stir Fry – Fast, flavorful, and even the picky eaters are on board! This is a clean out the fridge and still win dinner kind of meal.
- Side Dish:
- Asian Cucumber Salad – Make it ahead and thank yourself later. It’s crisp, fresh, and so good with the stir fry.
- Sautéed Green Beans – Simple, quick, and one less thing to think about.
- Dessert – Cookies and Cream Rice Krispie Treats – I’m not being dramatic when I say these are next level. My kids fully support turning these into a side hustle. They are that good – rice krispie treat stand, anyone?
Appetizer
- Spinach Feta Puff Pastry Spirals – Flaky, cheesy, and perfect to set out while everyone circles the kitchen asking what’s for dinner.
