Family Meal Plan

Monday
- Main Dish: King Ranch Chicken Casserole – If you’re from Texas then you’ve probably had this. It’s cheesy, hearty, and one of those dinners where everyone cleans their plate without negotiating.
- Side Dish:
- Mexican Rice – Simple, flavorful, and exactly what you want alongside a casserole like this. It soaks up all the goodness.
- Mexican Corn Salad – Fresh, colorful, and a really nice balance to the richer main dish. It comes together quickly and feels a little special without extra work.
Tuesday
- Main Dish: Crock Pot BBQ Chicken – This is a toss-it-in-and-move-on kind of recipe. Three ingredients, barely any effort, and it keeps things calm on a busy day. Make extra now so Thursday is already halfway done.
- Side Dish:
- Hashbrown Casserole – Creamy, cheesy, and nostalgic in the best way. It’s one of those sides people keep sneaking bites of straight from the pan.
- Macaroni and Cheese – Baked macaroni just like my grandma used to make. My favorite side with BBQ flavors is always macaroni and cheese.
Wednesday
- Main Dish: Creamy Beef and Shells – This one checks a lot of boxes. It’s filling, kid-approved, and comes together fast when everyone is hungry right now.
- Side Dish:
- Strawberry Spinach Salad – Bright and fresh with just enough sweetness. It’s a great way to lighten things up next to the pasta. Add sweet and savory pecans, too!
- Garlic Bread – If your family loves garlic bread, this is the recipe you’ll keep coming back to. It’s bold, buttery, and never makes it to leftovers.
Thursday
- Main Dish: BBQ Chicken Nachos – I’m 100% sure this is what dinner dreams are made of! Using your leftovers from Tuesday and you’ll have dinner out in a flash.
- Side Dish:
- Southern Coleslaw – Cool and crunchy, this is a great contrast to warm, cheesy nachos. It rounds out the plate without extra fuss.
- Crock Pot Refried Beans – These are super versatile. Serve them on the side or pile them right onto the nachos and call it a day.
Friday
- Main Dish: Baked Chicken Taquitos – I’ve had game day appetizer vibes happening, so I prepped these to test out the recipe – my kids went nuts, so here we are having them as a meal!
- Side Dish:
- Mexican Street Corn Casserole – Always popular and always scraped clean. It’s quick to prep and pairs well with just about anything Mexican-inspired.
- House salad with jalapeno ranch dressing – Even salad skeptics usually go back for seconds and it’s probably because of the dressing! .
- Dessert – Chocolate Chip Cookies – You can’t go wrong here. These are perfect for the weekend and easy to share if you’re headed to a game or get-together. My other crowd favorites are my Wyoming Cowboy Cookies and Double Chocolate Pudding Cookies.
Appetizer
- Garlic Parmesan Wings – People are always shocked these come from the crockpot. They’re saucy, flavorful, and perfect for game day or a casual night in.
