Monday
- Main Dish: Creamy Spinach Chicken Lasagna Roll Ups – Spinach and creamy sauce rolled into lasagna noodles – it feels like you went all out, but it’s weeknight-friendly. My family always fights over seconds!
- Side Dish:
- Maple Glazed Carrots – Sweet, buttery, and adds color to the plate. So many yummy veggies with tonights dinner!
- Parmesan Broccoli – Cheesy, crunchy-edged broccoli that’s actually kid-approved.
Tuesday
- Main Dish: Crockpot Pineapple Pork – Sweet, tangy, and totally hands-off. You toss it in, walk away, and your house smells amazing by dinner!
- Side Dish:
- Cajun Roasted Veggies – Adds just the right kick to balance the sweetness of the pork.
- White Cheddar Broccoli Mac and Cheese – A creamy side the whole family devours.
Wednesday
- Main Dish: Cheeseburger Pasta – All the flavors of a cheeseburger baked into pasta form. It’s the “everyone’s happy” kind of dinner we all need in the middle of the week!
- Side Dish:
- Sautéed Green Beans – Simple and a safe bet most kids won’t fight you over.
- Garlic Bread – The perfect way to scoop up every cheesy bite.
Thursday
- Main Dish: Crockpot Tuscan Chicken – This is one of the most popular recipes on my site and you’ll see why after you try it.
- Side Dish:
- Easy Caprese Salad – Fresh tomatoes and buffalo mozzarella are always a crowd favorite.
- Rice – You can use either white or brown. If you want to keep the meal lighter, you can use cauliflower rice to keep it healthy.
- Parmesan Cauliflower Bites – In just a few minutes you will have a healthy, crispy, and delicious side dish.
Friday
- Main Dish: Cream of Mushroom Pork Chops – The creamy mushroom sauce tastes like something you’d order out, but it comes together while you’re juggling after-school chaos.
- Side Dish:
- The BEST Mashed Potatoes – These mashed potatoes are easy enough that they often are our go-to for a side dish on a busy night.
- Side Salad + Lemon Vinaigrette Dressing – Add some green to your meal with a simple salad. You can store the Lemon Vinaigrette Dressing in the fridge for up to a week, so make it ahead of time!
- Dessert – Chocolate Peanut Butter Pretzel Bars – Salty, sweet, and no-bake. My family calls dibs on these bars before they even set.
Appetizer
- Baked Brie in Pie Crust – Warm, oozy brie wrapped in crust – the first thing everyone wants when they walk in the door.
