Family Meal Plan

Monday
- Main Dish: Crockpot Cuban Style Mojo Pork – Dinner cooks while you’re running kids around = gotta love the crockpot! This pork comes out juicy, full of flavor, and best of all… you’ll make extra so Wednesday’s dinner is basically already done.
- Side Dish:
- Doctored Up Canned Black Beans – A few easy add-ins and suddenly canned beans taste homemade!
- Southern Coleslaw – A cool, crunchy bite to balance out that rich mojo pork.
Tuesday
- Main Dish: Cowboy Casserole – Not tacos, but still totally Taco Tuesday approved. This meal is saucy, cheesy, and cozy enough that the kids scrape their plates clean!
- Side Dish:
- Mexica Caesar Salad – All the crunch of a Caesar, but kicked up with a little southwest flavor.
- Southwest Rice – Easy, filling, and no complaints at the table.
Wednesday
- Main Dish: Cuban Sliders – Here’s the leftover magic – Monday’s pork turns into gooey, cheesy sliders. It’s a whole new meal without starting from scratch (yes, please!).
- Side Dish:
- Mexican Street Corn Dip – We LOVE this dip – the only negative is that it’s way too easy to keep going back for “just one more bite.”
- Jalapeno Ranch or Buttermilk Ranch – Because dipping your sandwich in ranch is always the right call.
Thursday
- Main Dish: Spinach and Feta Chicken Bake – This one dish meal is exactly what you need on a busy night! With a handful of ingredients it is packed with flavor, but you only need one dish which means you’ll have very little clean up!
- Side Dish:
- Garlic Smashed Potatoes – Crispy edges, fluffy centers, and plenty of garlic…what’s not to love?!
- Garlic Roasted Veggies – Throw them on a pan and forget about them until the timer dings.
Friday
- Main Dish: The Best Baked Chicken – This chicken is so good it can totally hold its own, but I love slicing it over a fresh salad.
- Side Dish:
- Arugula Pear Salad – Something about the fall makes me crave pear salads! Just top this with your chicken slices and you have a delicious well rounded meal.
- Garlic Cheese Bread – Because Friday nights deserve a little carb and cheese joy.
- Dessert – Devil’s Food Cake Cookies – Chocolate lovers go wild for these!
Appetizer
- Honey Whipped Feta Dip – Quick, minimal ingredients, hits the “looks like I put effort in” button, plus it has just enough flavor and texture that even picky eaters might try it!
