Family Meal Plan

Monday
- Main Dish: Crockpot Mississippi Chicken – This is on regular rotation! 5 ingredients and a crock pot is all you need for this simple and delicious dinner.
- Side Dish:
- Bacon Ranch Broccoli Salad – This easy salad can be prepped in advance, and the kids LOVE the flavors!
- Buns – My kids favorite way to eat Mississippi chicken is on a toasted bun. Sometimes I will also add a slice of provolone cheese to the top.
- Mashed Cauliflower – The mashed cauliflower recipe will blow your mind.
Tuesday
- Main Dish: Spinach and Artichoke Chicken Orzo – This one pot meal came about because I was CRAVING spinach artichoke dip, but I needed to get dinner on the table. This passed the test!
- Side Dish:
- Garlic Cheese Bread – This garlic cheese bread is packed with so much flavor and adds an extra layer of yum to your orzo dish.
- Tomato Mozzarella Basil Salad – This has all the flavor of a caprese salad made bite sized.
Wednesday
- Main Dish: Mexican Beef & Rice Skillet – All the delicious Tex-Mex inspired flavors come together in one skillet. It’s a great recipe for a busy night and is even better if you have a pound of ground beef ready to use.
- Side Dish:
- Jalapeno Ranch – Don’t be scared by the name, this is my kids FAVORITE and adding a drizzle of this to the top of the skillet is AMAZING!! Can’t recommend it enough.
- Mexican Roasted Veggies – These are a great wholesome addition.
- Toppings:
- Shredded lettuce
- Sour cream
- Guacamole
- Black olives
- Pico de Gallo
Thursday
- Main Dish: Creamy Pork Chops – Creamy pork chops can be prepped in just 10 minutes and in the oven for a quick weeknight meal. This is exactly the type of meal I love during the week!
- Side Dish:
- Roasted Vegetables – These oven roasted vegetables are actually veggie perfection.
- Steakhouse Wedge Salad – This salad comes together quickly with very little effort. If you want to make it extra special make my easy Bleu Cheese Dressing.
Friday
- Main Dish: Beef Bulgogi Bowls – Bulgogi (pronounced “bool-GOH-gee”) is beef that is savory and just a little bit sweet. It’s quick to make and we love to make bowls with it!
- Side Dish:
- Yum Yum Sauce – Once you’ve assembled your bowls, drizzle this sauce right on top.
- Sriracha Coleslaw – Add a little kick with this 6-ingredient recipe. It has crunchy slaw mix, green onions, and cilantro tossed in a creamy, tangy, and spicy sauce
- Dessert – White Chocolate Macadamia Cookies – These big, fluffy, bakery style cookies are almost irresistible!!
Appetizer
- Chicken Wings with Garlic Parmesan Wing Sauce – This is my favorite wing dressing! Make them as a snack for your family or bring them to a friends, but be prepared to share the recipe.
