Family Meal Plan

Monday
- Main Dish: Crockpot Bourbon Chicken – At the end of the day I find I’m always so grateful when I have a crockpot meal ready! This is the best bourbon chicken recipe. The sauce is the perfect combination of sweet and savory.
- Side Dish:
- Southwest Rice – You can also keep it simple with white or brown rice, but this recipe uses pantry staples and is probably just as easy, but more flavorful!
- Oven-Roasted Vegetables – The last time my oldest ate these he said “wow, these veggies are delicious” and I almost fell over, so we’re bringing them back!
Tuesday
- Main Dish: Chicken with Corn Salsa – This dish is the perfect summer dinner in my opinion. Fast with tons of fresh flavors!
- Side Dish:
- Black Beans – These are doctored up canned black beans – I share my favorite trick for making canned beans taste amazing.
- Chips and Salsa – This homemade blender salsa takes just 5 minutes to make.
- Rice – If you have leftovers from yesterday, eat them up tonight!
Wednesday
- Main Dish: Crockpot Smothered Pork Chops – The perfect mid-week dump and go recipe to get a hearty meal on the table when you are super busy!
- Side Dish:
- Garlic Mashed Potatoes – These are so easy and perfect for soaking up all that delicious gravy from the pork chops.
- Bacon Broccoli Salad – You can make this ahead and leave it in the fridge until it is time to serve.
Thursday
- Main Dish: Blackened Fish – This method is the BEST way to make fish and it’s so quick and easy it’ll shock you!
- Side Dish:
- Side Salad with Balsamic vinaigrette – Take the 5 minutes to make this dressing. You won’t regret it! You can also use it for tomorrow’s dinner salad.
- Parmesan Roasted Cauliflower – This goes with just about anything, but especially the blackened fish.
Friday
- Main Dish: Marry Me Chicken Quiche – Add this to my list of “marry me” recipes – they’re all amazing! This quiche is the perfect Friday meal because it is easy, delicious, and the leftovers work perfect for a lazy weekend breakfast the next morning.
- Side Dish:
- Million Dollar Bacon – If you haven’t made this bacon, you haven’t lived. This is THE BEST bacon!
- Simple Arugula Salad – Grab a handful of baby arugula and drizzle it with olive oil, some lemon juice, and a pinch of sea salt. You can also try my vinaigrette.
- Dessert – Cookies and Cream Parfaits – Kids love these because they look fancy, but you only need a few ingredients to put them together.
Appetizer
- Cheesy Pizza Rolls – This is a fantastic summer appetizer or lunch – my kids love making these!
