Family Meal Plan
Meal Plan – Week 326

Monday
- Main Dish: Bang Bang Chicken Bites – You already know this, but we LOVE chicken bites. These are a little sweet and a little spicy and also incredibly delicious and take just 20 minutes!
- Side Dish:
- Asian Cucumber Salad – When I make a dish that has a little kick I like to have a side that includes cucumbers. Cucumbers always bring that “cooling” flavor that helps complement the main dish.
- Rice – You can’t go wrong with my easy Veggie Fried Rice or Lemon Rice. You can also try a cauliflower rice if you’re wanting to lighten up your meal.
Tuesday
- Main Dish: Beef Barbacoa – I try to make one slow cooker recipe a week because it’s hands-off and cleanup is typically very quick. This is one of my favorites for these reasons, but also because you can turn the leftovers into a totally new meal later in the week!
- Side Dish:
- Homemade Borracho Beans – So easy and makes plenty to freeze for later.
- Chips with Salsa and Guac – You can grab the salsa and guac at the store, or make them from scratch for an extra yummy dinner.
Wednesday
- Main Dish: Baked Feta Chicken – When I shared this recipe the first time I seriously think we almost sold out the grocery store of these ingredients!
- Side Dish:
- Pesto Roasted Vegetables – These are fast and oh, so delicious.
- Pasta – We like angel hair or penne pasta
- Garlic Bread – Sometimes I wait all week for a perfectly crisp piece of a garlic bread, but not this week! You can whip up this homemade garlic bread in just 10 minutes.
Thursday
- Main dish: Beef Barbacoa Burrito – Use your leftover beef Barbacoa from Tuesday nights meal to make a fresh meal that doesn’t say “leftovers”. You can also make homemade tortillas – give it a try; they’re actually pretty easy!
- Side Dish:
- Mexican Roasted Vegetables – Serve as a side or you can even add to the burrito.
- Corn Salsa – Make sure you read the instructions on this – there are tips from the “pros” that make this really taste like a popular restaurants!
Friday
- Main Dish: Ground Beef Nachos – Kind of like pizza night, I’m sure my family thinks I do nachos for them. Really though, it’s kind of for myself – I can get protein, veggies and a delicious meal going and the cleanup is so easy!
- Side Dish:
- EASY Guacamole – It doesn’t get any easier than table-side guac!
- Spicy Jalapeno Ranch – You will not be mad when you add a drizzle of this to your nacho.
- Dessert – Strawberry Crumble Bars – Quick to throw together and packed with sweet, buttery goodness. Add a scoop of vanilla bean ice cream and you’ve got a summer dessert that tastes like you spent all day baking (but didn’t!).
Appetizer
- Buffalo Chicken Nuggets – Don’t limit yourself to having nuggets as a meal – they’re perfect as an appetizer! These simple baked nuggets are packed with delicious buffalo flavor and taste light. Make this ranch dressing to have as a dip.
