Family Meal Plan

Monday
- Main Dish: Stuffed Pepper Casserole with Ground Turkey — Not to be dramatic, but if you love stuffed peppers, you might just like the lazy version more!
- Side Dish:
- Ranch Smashed Potatoes — This is the best way to make potatoes – they are SO crispy and flavorful.
- Green salad with Italian dressing — This simple recipe is such a good little secret. One batch of this dressing is quick and you can store it for months! You also use this in the casserole, so there’s no reason not to make this crisp Italian salad.
Tuesday
- Main Dish: Carnitas Street Tacos — Taco Tuesday! The creamy queso fresco and crunchy corn salsa takes these to another level!
- Side Dish:
- Mexican Rice — I love a one pan wonder! This rice is restaurant quality and 5 stars, if you ask me.
- EASY Guacamole — Tableside guac, but at home – yum!
- Pico de Gallo — Fresh delicious salsa that is Great to top your tacos with.
Wednesday
- Main Dish: Crock Pot BBQ Chicken — This simple classic has 3 ingredients and is great for the middle of the week busyness. Making a homemade meal doesn’t mean you need to be in the kitchen all day. *Save the extra for Friday.*
- Side Dish:
- Macaroni and Cheese — Baked macaroni just like my grandma used to make. My favorite side with BBQ flavors is always macaroni and cheese. *you may have leftovers so use them tomorrow!*
- Hashbrown Casserole — My copycat version of Cracker Barrel – it’s creamy, cheesy and the perfect crisp on top.
Thursday
- Main Dish: Ground Chicken Sloppy Joes — Just 20 minutes for the easiest weeknight dinner.
- Side Dish:
- Baked Potato Wedges — You can also use sweet potatoes if you prefer.
- Macaroni and Cheese — Macaroni from yesterday can be reheated in the oven and goes perfectly with your sloppy Joes.
Friday
- Main Dish: BBQ Chicken French Bread Pizza — At the end of the week, cooking is sometimes the last thing I want to do. Having the leftover BBQ chicken from Wednesday makes it feel a little less like a chore. And you can get the kids involved with making the easiest pizza ever!
- Side Dish:
- Bacon Ranch Broccoli Salad — This is the ultimate side dish and I love how fresh it tastes.
- Roasted Vegetables — Roasted veggies require very little and that means an easy cleanup, too. I try to sneak in some yummy, perfectly crisp veggies even if I’m doing a lazy night dinner.
- Dessert – White Chocolate Macadamia Nut Cookies — Sock, thick and chewy…This is the BEST recipe for a classic cookies.
Appetizer
- Chicken Fajita Dip — I am a huge fan of dips and this hearty dip is a favorite at parties. It actually tastes like my chicken fajitas, but in appetizer form.
