Family Meal Plan – 279
Monday
- Main Dish: Southwest Chicken Casserole – We call this a Mexican lasagna because the chicken, black beans, corn, melty cheese, and tortillas are stacked to perfection.
- Side Dish:
- Cilantro Lime Rice – This side is absolutely delicious!
- Mexican Corn Salad – This checks so many of my “must haves” when it comes to side dishes – it’s quick, has lots of veggies packed in and it’s delicious!
- Pico de Gallo – You can’t forget this staple for any Mexican dish.
Tuesday
- Main Dish: Creamy Garlic Pork Chops – 10 minutes of prep is all you need to have these creamy pork chops prepped and in the oven for a quick weeknight meal.
- Side Dish:
- Garlic Smashed Potatoes – I can’t think of anything better than these to go along side pork chops!
- Roasted Vegetables – For a lighter take, enjoy these perfect oven roasted vegetables.
Wednesday
- Main Dish: Baked Hawaiian Chicken – This one dish dinner is a family friendly recipe that packs in the flavor with just minutes of prep. *make a little extra so you have leftovers for Friday*
- Side Dish:
- Rice – White, brown or wild
- Garlic Bread – I love how easy garlic bread is to make. Make sure to read the recipe because my secret ingredient makes it 5 stars!
- Pasta Salad – This cold pasta salad has the BEST dressing, veggies, cheeses, and savory pepperoni for the perfect hearty side dish.
Thursday
- Main Dish: Honey Sriracha Meatballs – These are sweet, savory and also have a hint of heat. Served with the perfect sides, you’re going to love dinnertime.
- Side Dish:
- Parmesan Cauliflower Bites – Your kids will be shocked when they hear these are healthy because the garlic, parmesan and crispy bites are so incredible you’d never know!
- 15 Minute Chicken Fried Rice, white or brown rice – Rice is perfect to soak up the sauce from the meatballs.
Friday
- Main Dish: Hawaiian BBQ Chicken Pizza – Follow my BBQ pizza recipe, but also include the leftovers from Wednesday for the most delicious Friday night dinner.
- Side Dish:
- House Salad –This Italian style house salad (think Olive Garden!) comes together quickly and is a great way to balance out the meal.
- Carrots and Celery sticks – With creamy buttermilk dressing. Sometimes the best things are simple!
- Dessert – Peanut Butter Swirl Bars – If you like peanut butter and chocolate, what are you waiting for?!
Appetizer
- Chicken Wings with Garlic Parmesan Wing Sauce – This is my favorite wing dressing! Test these out now so you know how amazing they are once football/app season rolls around.😉
