Family Meal Plan

Monday
- Main Dish: Baja Chicken – This is my new favorite chicken recipe! Dinner tonight, but great for lunch tomorrow!
- Side Dish:
- Mexican Roasted Vegetables – Make some extra veggies to mix in with your repurposed lunch tomorrow!
- Mexican Corn Salad – The sweet and tangy flavors in this salad are perfect as a side dish.
- Lunch Idea: Baja Chicken Wrap – Add chicken, black beans, avocado, tomatoes, and feta to a large tortilla and wrap it up.
Tuesday
- Main Dish: Sheet Pan Sausage and Veggies – The cajun butter in this dish is out of this world! And who doesn’t love a sheet pan meal? *Save your leftovers for Thursday*
- Side Dish:
- Kale Salad – Because of the parmesan and easy lemon vinaigrette, this salad is irresistible and one I rotate making.
- Lemon Rice – An easy side dish that goes with pretty much everything? Yes, please!
Wednesday
- Main Dish: Crock Pot Thai Style Pork – Happy Wednesday! This is such a slump day for so many of us. I think crock pot recipes are perfect mid week!
- Side Dish:
- Sriracha Coleslaw – Sriracha sauce, lime and cilantro give this coleslaw an incredible flavor!
- Asian Cucumber Salad – I love the cool, crispness of this salad.
Thursday
- Main Dish: Cajun Roasted Vegetable Pasta – *Using your leftover sausage from Tuesday,* we’re going to transform your dinner! Make pasta as directed on the box. Drizzle with olive oil and toss with roasted vegetables, sausage, and parmesan cheese. Sprinkle extra seasoning if you want a stronger flavor. OR, you can make this homemade alfredo sauce and toss the pasta and veggies with it.
- Side Dish:
- Roasted Veggies – these are great if you don’t have extra veggies from earlier in the week.
- Garlic Bread – this is my go to recipe!
Friday
- Main Dish: Green Chile Chicken Tacos – This is my favorite crock pot recipe!
- Side Dish:
- Cheddar Ranch Refried Beans – This is a popular appetizer I make, but I absolutely love it with green chile tacos!
- Super Fast Guacamole and Pico de Gallo – both classics for taco night.
- Dessert: Fudge Brownies from Scratch – Don’t be scared by the word “scratch”! They’re just as easy as a box mix and so much better.
Appetizer
- Burrata Caprese Salad – This extra crisp salad looks impressive and is going to be your new favorite salad!
