What is Stroganoff anyway?
Beef Stroganoff first came about in Russia centuries ago. It was named after a member of a Russian noble family by the name of “Stroganov.” Sounds familiar!
The first iterations involved marinated beef in a creamy mustard and broth sauce; later versions came to include mushrooms and onion like you often see today.

Ingredients + Substitutions
- Beef – The beauty of cooking in the Crockpot is that the meat for beef stroganoff can be a less expensive cut. Look for stew meat, round steak, chuck steak, or chuck roast.
- Cream of mushroom soup – You’ll need one can of cream of mushroom soup.
- Garlic – You’ll want to mince it finely so that garlic makes it into every bite.
- Worcestershire sauce – With its savory, salty, and a slightly sour flavor profile, Worcestershire sauce adds great flavor to this slow cooker beef stroganoff.
- Onion soup mix – The seasonings and beef bullion flavors in onion soup mix make the most flavorful yet simple beef stroganoff recipe.
- Mushrooms – I like to use white button mushrooms, sliced vertically. To wash them, quickly swish a few at a time in a bowl of water to loosen the dirt, then wipe them the rest of the way clean with a clean dish towel or paper towel.
- Onion – I like to use yellow onion in this beef stroganoff, but white onion works well, too.
- Sour cream – Added at the end of cooking so that it doesn’t split or curdle, sour cream makes a tangy, savory, and perfectly creamy beef stroganoff.
- Egg noodles – The perfect bed for your beef and mushroom stroganoff!
Make sure to see the recipe card at the bottom of this post for the full quantities and ingredients list.
Recipe Variations
If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!
- Crock Pot Ground Beef Stroganoff– Instead of stew meat, brown a pound of lean ground beef in a bit of cooking oil, then add it to the Crockpot with the rest of your ingredients for a variation of stroganoff that’s also delicious!
- Gluten-Free Beef Stroganoff– Make sure the cream of mushroom soup is gluten-free and swap out the noodles for rice. This lemon rice is perfect!
- Mushroom-Free Beef Stroganoff– Use cream of celery or cream of chicken soup instead of cream of mushroom soup, and leave out the mushrooms.
Recipe Step by Step
I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make Crockpot Beef Stroganoff.
Add the cream of mushroom soup, garlic, Worcestershire sauce, and onion soup mix to the Crockpot.
Add the diced onions and mushrooms. Mix until combined.
Add the beef and mix again until coated well with the soup and mushroom mixture.
Cook until the beef is tender, on low for 6-8 hours. Use a spoon to skim any extra fat from the top.
Add the sour cream.
Stir in the sour cream until well-distributed and creamy.
Recipe Tips
- Cut against the grain – For the most tender bites of beef, you’ll want to cut against the grain of the meat.
- Brown the beef for extra flavor – This Crockpot Beef Stroganoff recipe is designed to turn out perfect when you simply dump in all the ingredients and go, but if you want a boost of flavor and have a bit of extra time, brown the beef in a tablespoon of cooking oil in a heavy skillet or Dutch oven before adding it.
Recipe Short Cuts
If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!
- Buy pre-cut stew meat– Most butcher shops and grocery stores sell pre-cut stew meat, saving you the step of having to cut it up yourself.
- Use pre-minced & pre-sliced veggies – Buy already-minced garlic, diced onion, and sliced button mushrooms in the produce section of your grocery store to give yourself a break with the chopping.
- Cook it on high – You can cook this stroganoff on high for 4-5 hours, but I recommend going with the longer cooking time on low for the most tender beef stroganoff.
