Family Meal Plan
MONDAY
- Main Dish: – Slow Cooker Beef Barbacoa– This easy beef roast is infused with the best Mexican flavors and slow cooked to tender, fall apart perfection! I like to serve it up with rice and beans the first day and save leftovers for a super easy (kid-favorite) meal later in the week
- Side Dish:
- Tex-Mex Rice – Tastes like a Mexican restaurant!
- Black beans– Use this short cut recipe to make canned black beans taste like you slaved away for hours!
- Toppings– If you want a little extra, top with your choice of pico de gallo, guacamole, or jalapeno ranch.
TUESDAY
- Main Dish: – Greek Chicken Bites– This super simple one skillet recipe is kind of like making fancy chicken nuggets! Instead of breading, these tender, chicken breast bites get coated in a greek seasoning and then pan seared in minutes for a tender flavorful chicken bites. I like to serve it simply with a side salad and some rice for an extra fast and extremely yummy weeknight meal.
- Side Dish:
- Lemon rice – cook up your favorite rice and right after it is done cooking toss it with fresh lemon juice, parsley, and salt to taste.
- Cucumber tomato salad – This quick salad has the perfect flavors to compliment this meal.
WEDNESDAY
- Main Dish: Beef Barbacoa Street Tacos– This is the easiest way to use up leftovers from Monday. These tacos only have 5 ingredients and you can adapt and customize based on your kids preferences. Best part: Using leftover beef barbacoa makes this dinner insanely fast to make!
- Side Dish:
- Mexican Street Corn Casserole– This is one of my most popular side dish recipes! It is quick and so so delicious.
- Tex-Mex Roasted Vegetables– These are super fast, super wholesome, and super yummy!
THURSDAY
- Main Dish: Crock Pot Loaded Baked Potato Soup– If you want a throw it in and forget it kind of recipe, this is it! This Baked Potato Soup is delicious and the part my kids like best is customizing their bowl with their favorite toppings. I also have a pressure cooker baked potato soup recipe here if you want to cook it faster!
- Sides:
- Toppings– Your choice of crumbled bacon, cheddar cheese, sour cream, green onions, etc.
- Side Salad – Pair the soup with a side salad if you want a little something extra. I love to use this Homemade ranch dressing– SO GOOD!
- Garlic bread– You know this is my favorite recipe!
FRIDAY
- Main dish: BBQ Chicken Casserole– This quick and easy casserole comes together in minutes and marries some of our family’s favorite flavors. You can use leftover chicken, a rotisserie chicken, or any pulled chicken you may have. It is perfect for eating with a fork out of a bowl, or piling on top of chips for a hands only meal!
- Side:
- Bacon Ranch Broccoli Salad– This kid-approved salad has some serious flavor and it can be made ahead for busy nights. I always like it on Friday so I can grab this salad for an easy weekend lunch.
- Super Easy Cornbread– The trick works every time! This cornbread is the most tender, moist you will ever have!
- Dessert – No Bake Cookies- This fast cookie recipe is always my go-to when I have a chocolate craving, I love how it is super rich, and hearty with the oatmeal and peanut butter.
APPETIZER
- Cajun Chicken Dip– If you need to bring a dish that people will LOVE, this is guaranteed to get at least a few recipe requests! Plus, this warm, cheesy, dip can be made in minutes and it is just SO GOOD!
