Family Meal Plan

Monday
- Main Dish: Baked Tortellini Casserole – With only 4 ingredients you’re going to have the easiest meal on the dinner table in no time.
- Side Dish:
- Pesto-Roasted Veggies – These tender roasted vegetables are always a hit.
- Best-Ever Garlic Bread – Keep it simple and serve a classic garlic bread that pairs perfectly with any Italian-inspired dinner!
Tuesday
- Main Dish: Caprese Chicken – This recipe has delicious flavors and feels like a fancy meal, but only takes minutes to put together with only 4 simple ingredients and one dish.
- Side Dish:
- Lemon Rice – This rice would be delicious, but you can also serve over wild, white or brown rice or with a side of risotto.
- Smashed Potatoes – This is my husbands favorite side for this dish.
- Pasta– You can serve this right over pasta tossed with olive oil or butter and garlic or with additional pesto.
- Veggies – If you’re looking for low carb, here are some great suggestions – add a side of veggies like broccoli, green beans, brussel sprouts etc.
Wednesday
- Main Dish: Creamy Chicken and Rice – This casserole is the perfect comfort meal! It is old school chicken rice casserole that is a favorite with adults and kids.
- Side Dish:
- Italian House Salad – This salad goes with just about anything. It’s great for all those times you need just a little something extra.
- Bacon Broccoli Salad – The flavors in this salad are a delicious pairing of sweet and salty with a little tangy dressing.
Thursday
- Main Dish: Crockpot Beef Barbacoa – Let the slow cooker do the work on this absolutely tender, juicy, flavor loaded roast. I love to serve this dish bowl style the first night. Then, save the extras for a super quick and easy dinner tomorrow.
- Side Dish:
- Homemade Refried Beans – So easy and makes plenty to freeze for later.
- Mexican Style Rice – This seriously tastes like it came from a Mexican restaurant! So good!
Friday
- Main dish: Beef Barbacoa Burrito – Use the extra beef Barbacoa from last nights meal to make these everyone-will-love loaded beef burritos for an extra easy dinner.
- Side Dish:
- Mexican Roasted Vegetables – This are so quick to make, but packed with so much flavor.
- Mexican Street Corn Casserole – The best part is that since this Mexican Street Corn Casserole is made and baked completely in one dish, there is almost no clean up!
- Chips with Salsa and Guac – You can grab the salsa and guac at the store, or make them from scratch for an extra yummy dinner.
- Mango Avocado Salsa – This is my favorite!
- Dessert — Chocolate Chip Pudding Cookies – If you want the softest chocolate chip cookies of all time, this is for YOU! These cookies are soooo flavorful.
Appetizer
- Green Chile Cheddar Dip – This warm cheesy dip is packed with southwest flavors. The best for dipping chips and veggies in for a hearty snack
