Family Meal Plan
MONDAY
- Main Dish: Enchilada Meatballs – We decided that if these don’t go viral, nothing will! Serve them over rice or pasta, or even stuff them into tortillas or taco shells for a deliciously easy Mexican-inspired dinner.
- Side Dish:
- Cilantro Lime Rice – This is my go to and it tastes like Chipotle rice! So delicious and easy peasy.
- Crock Pot Black Beans – Dried beans that are cooked slowly over a few hours are perfectly soft and tender and are a family favorite!
- Mexican Cornbread – This is an unexpected side, but would pair perfectly if you are wanting something a little less traditional.
TUESDAY
- Main Dish: Baked Creamy Garlic Pork Chops—With as little as 10 minutes of prep you can have these creamy pork chops ready to cook for an extra quick weeknight meal.
- Side Dish:
- Steakhouse Wedge Salad — This salad comes together quickly and with very little effort. It’s extra amazing with this easy Bleu Cheese Dressing!
- Homemade Mashed Potatoes — There is nothing better than mashed potatoes and pork chops. And these are super creamy and buttery which makes for the best texture!
WEDNESDAY
- Main Dish: Crock Pot Rotisserie Chicken — This is a great no stress meal. Hands off cooking is the best on those busy nights! **Make sure to save some leftover chicken so you can use them tomorrow!**
- Side Dish:
- Crispy Brussels Sprouts – With a few ingredients and a sheet pan, these are irresistible!
- Sautéed Green Beans — Green beans go with just about anything, but these sautéed green beans are my favorite way to make them.
THURSDAY
- Main Dish: Fettuccini Alfredo — If you haven’t made homemade alfredo before, you are going to be shocked at how simple it is! This sauce is super creamy, rich, and flavorful, and still so quick and easy to make.
- Side Dish:
- Homemade Bacon Bits – All you need is one ingredient – BACON – and you’ll have an explosion of flavor when you top your fettuccini Alfredo with these!
- Shredded Rotisserie Chicken — Use your leftovers from yesterdays meal and just toss shredded chicken into your pasta and sauce for some added protein.
- Brown Butter Broccoli — Broccoli is a classic go to when you’re serving Fettuccini Alfredo. Serve this as a side or toss it directly into the Alfredo sauce!
FRIDAY
- Main dish: Zesty Crock Pot BBQ Pulled Pork—Pulled Pork is EASY in the Crock Pot and you can use it for sandwiches, salads, or just eat it on its own with your favorite barbecue sides. You’ll have plenty of leftovers too for lunch on the weekend!
- Side Dish:
- Hawaiian Rolls – Top with pulled pork
- Broccoli Slaw — Crunchy, sweet, and perfect alongside a pulled pork sandwich.
- Baked Potato Wedges — Baked in the oven with my special seasonings, you will have potato wedges that are perfectly crisp on the outside and soft on the inside!
- Dessert – Fudge Brownies — These are insanely delicious!
APPETIZER
- Garlic Chicken Bites — These are great if you need a heavier appetizer as an alternative to buffalo wings. Plus, less mess!
