Family Meal Plan
MONDAY
- Main Dish: – Baked Stuffed Pepper Casserole– This has all the flavor of a classic stuffed peppers recipe, but it is so much more quick and easy to make! Just mix, dump, and bake. The result is a piping hot casserole full of hearty beef, tangy Italian seasoned tomato sauce, and a irresistibly cheesy topping.
- Side Dish:
- Best EVER Garlic Bread – This is a family favorite!
- Side salad with Creamy Italian Dressing – Making the dressing from scratch only takes 5 minutes and is amazingly delicious!!
TUESDAY
- Main Dish: – Crockpot Chicken and Stuffing– This dump and go slow cooker recipe is is the coziest! It combines tender slowly cooked chicken breast with savory stuffing, wholesome veggies, and a rich gravy for an all-in-one dinner fast!
- Side Dish:
- Mile High Biscuits – These are insanely delicious and the perfect way to round out a cozy meal.
WEDNESDAY
- Main Dish: Blackened Chicken Tenders– Chicken tenders you can feel good about feeding your family! These blackened chicken tenders are not breaded, but instead coated in a layer of delicious blackening seasoning then pan seared to lock in the juiciness. Make sure to save the leftovers for Friday’s dinner!
- Side Dish:
- Garlic Roasted Vegetables– My go to side dish! Easy, healthy, and yummy!
- Dips– Dipping sauce is one of the best parts of having chicken tenders!! Pick one of these homemade sauces that only take 5 minutes to make.
THURSDAY
- Main Dish: Brown Butter Tortellini with Spinach– This is the perfect mid-week meatless meal. It can be made in minutes thanks to quick cooking tortellini, packs in some veggies, and no one is complaining since they are all tossed in the most delicious brown butter sauce.
- Sides:
- Cheesy Pesto Bread-level up your garlic bread with this recipe!
- Antipasto Salad– If you need a little meat for the meal, this meat based salad is perfect!
FRIDAY
- Main dish: Blackened Chicken Sandwich– Use leftover blackened chicken tenders from Wednesday to save time! These sandwiches make the best Friday dinner since they are casual and each person can customize what they top their sandwich with.
- Side:
- Bacon Broccoli Salad– This recipe can be made fresh, or make it ahead!
- Seasoned Potato Wedges– Love these for a french fry feel, but keeping it lighter!
- Dessert – Peanut Butter Pretzel Bars– These are known as the “Kimber Brownies” among my friends and if you are a chocolate lover you are going to want to make them ASAP!
APPETIZER
- Hot Spinach Artichoke Dip– This is one of my family’s “secret recipes” that we love to bring to parties, pot lucks etc. It is always one that is among the first empty, and people ask for the recipe before you go.
