Italian Quinoa Salad
This Italian Quinoa Salad is a power salad packed with delicious seasonings and tons of wholesome veggies. This is one of my go-to salads when I have a potluck to attend.

Ingredients

cup
quinoa
1/2
cup
green bell pepper
chopped
1/2
cup
red bell pepper
chopped
1/2
cup
red onion
finely chopped
1/2
cup
cherry tomatoes
quartered
1/2
cup
pepperoni slices
quartered
1/4
cup
fresh basil
finely diced

cup
Italian dressing
Instructions
Prepare quinoa per package directions.
Add bell pepper, onion, tomatoes, pepperoni slices, and basil and stir to combine.
Pour Italian dressing over the quinoa mixture and mix thoroughly. Chill for at least 30 minutes or up to overnight. Serve cold. Enjoy!
Notes
Leftovers can be stored in the refrigerator for up to 3 days. To prep ahead, prep all ingredients and store separately.
