This Crockpot Sausage and Peppers is the ultimate dump-and-go dinner! Juicy Italian sausage links slow cook with colorful bell peppers, onions, and a rich, garlicky tomato sauce until everything is tender, saucy, and packed with bold Italian flavor.
Thinly slice the onion and bell peppers. Lay them in the bottom of the slow cooker.
Lay the sausage links on top of the peppers and onions. Pour the crushed tomatoes and vinegar over the sausage then top with garlic, Italian seasoning, and oregano. Use a spoon to stir the seasonings and vinegar into the tomatoes.
Cover and cook for 3-4 hours on high, or 4-5 hours on low.
Once done, mix the contents of the slow cooker well and garnish with parmesan cheese and parsley if desired. Serve on hoagie rolls, or over rice or potatoes.
