Crisp lettuce topped with black beans, fresh veggies, creamy avocado, and cheddar. Then, it's double-drizzled with BBQ and ranch and topped with crunchy French-fried onions. This salad is so easy to make and absolutely delicious!
Chop the romaine lettuce and place it in the base of the salad bowl.
Top with the chicken, then add the black beans, pico de gallo, cucumber, and avocado.
Sprinkle cheese and french fried onions over the top of the salad, then drizzle with ranch and BBQ sauce.
Notes
If you want to prep this salad in advance, you can prepare everything up to step 2, except the avocado. Before serving, toss salad with the dressing, and add cheese, french fried onions and avocado.Substitutions:
BBQ chicken: Any similarly flavored or neutral chicken can be substituted.
Cheddar cheese: Pepper jack or Colby Jack will work, too.
How to Store: Once the dressing is added to this salad, it's not going to store well (the dressing will make it soggy). You'll want to store the salad ingredients separately from the dressing and add the avocado at the last minute. How to Scale: This recipe can easily be doubled if you are feeding a crowd or halved for smaller portions.
