Ingredients
1tablespoonbutter
1cuplong grain white rice
1onion
1cupcorn
1/2teaspoongarlic powder
1/2teaspooncumin
1/4teaspoonChile powder
1½cupschicken broth
10ouncesROTEL tomatoes with green chiles(1 can)
Garnish
1lime
Cilantro
Instructions
In a large skillet, melt the butter over medium heat. Add the rice, onion, corn, garlic powder, cumin, and chile powder. Sauté 2-3 minutes or until onion is translucent and rice starts to toast.
Add the chicken broth and ROTEL tomatoes and bring to a boil. Reduce heat to low and cover. Let simmer covered for 20 minutes, or until rice is tender.
Once done, squeeze lime juice over the rice and top with chopped cilantro.
