Ingredients
2poundsbeef stew meat
¼cupflour
1teaspoongarlic powder
1teaspoonsalt
1teaspoonground black pepper
½teaspoondried thyme
1oniondiced
1poundbaby yellow potatoeshalved
1cupcarrotschopped
1cupcelerydiced
2tablespoonstomato paste
6cupsbeef broth
2tablespoonsbalsamic vinegar
¼cupcornstarch
Instructions
Place the stew meat in the bottom of the slow cooker. Sprinkle the flour, garlic powder, thyme, salt and pepper over the meat and toss to coat it on all sides.
Add the onion, potatoes, carrots and celery to the crockpot. Then add the beef broth, tomato paste, and vinegar and stir.
Close the lid and set the slow cooker to low for 6-8 hours.
30 minutes before you want to eat, open the slow cooker and use the liquid from the slow cooker to mix with the corn starch until you form a slurry (thin paste). Mix the slurry into the crockpot and continue to cook for 30 minutes.You can add additional cornstarch to thicken it more, or less to make it thinner.
