Ingredients
For the Red Velvet Cookies
1(15.25 ounce) Red Velvet cake mix
½cupvegetable oil
2large eggs
For the Cream Cheese Frosting
2ouncessoftened cream cheese(¼ block)
3tablespoonsheavy cream or milk more as needed
2cupspowdered sugar
¼teaspoonvanilla extract
⅕teaspoonsalt
Instructions
To make the red velvet cookies
Preheat oven to 375˚F.
In a large bowl, combine the cake mix, oil, and eggs. Mix until smooth with an electric mixer or by hand.
Place rounded tablespoonfuls of the cookie dough on a baking sheet 2 inches apart.
Bake for 9-10 minutes or until the cookies are set and no longer shiny. Cool on the cookie sheet for 2-3 minutes, then transfer to a wire cooling rack.
To make the cream cheese frosting
Use an electric mixer to beat the softened cream cheese and heavy cream together until smooth. Add the vanilla and salt and mix.
Add the powdered sugar a little bit at a time and mix until smooth. Add more cream if needed to get the frosting to the desired consistency for spreading.
Once the cookies are completely cool, top each one with a dollop of frosting and use a spatula to spread it over the top of the cookie.
