Ingredients
For the Chicken
2poundschicken breastcut or pounded into thin cutlets
1tablespoonlemon juiceplus 1/2 teaspoon lemon zest, from one lemon
1tablespoonchopped fresh parsleyplus more for garnish
1teaspoondried dillor 1 tablespoon fresh dill
Salt and pepperto taste
Instructions
Combine the chicken cutlets with 1 tablespoon of the olive oil, lemon juice, garlic, and greek seasoning. Mix to ensure the chicken is evenly coated.
Heat a large skillet over medium high heat. Add remaining tablespoon of oil.Once hot, lay 3-4 chicken cutlets in a single layer in the pan. Let sear for 3 minutes then flip and cook an additional 2-4 minutes or until it is cooked through (165˚F internal temperature.)Remove from pan and repeat until all cutlets are cooked.
Make the lemon feta topping by combining feta cheese, olive oil, lemon juice, parsley, and dill. Stir together mashing with a fork as you go to get everything well combined. Taste and season with salt and pepper to taste.
Return chicken to skillet and top with lemon feta topping, then garnish with additional herbs.
