Instructions
To make the whipped feta dip:
In a food processor, combine the feta cheese, greek yogurt, honey, and lemon juice.
Turn on food processor to high, or puree setting to blend the feta mixture until smooth.
Use a spatula to scrape the dip out of the food processor and onto a shallow dish or plate. Smooth the top and then add a swirl to create ridges. Drizzle olive oil and honey into the ridges.
Garnish with freshly chopped basil, then serve with chips.
For the Roasted Tomato Topping (optional)
Preheat the oven to 350˚F.
In a small baking dish, add the tomatoes and garlic. Drizzle 1 tablespoon of olive oil over the tomatoes then stir to coat everything.
Bake for 8-12 minutes or until the tomatoes begin to burst. Once out of the oven, use a spoon to place the tomatoes over the top of the whipped feta dip.
Notes
Optional tomato topping: This dip is equally good with or without the tomato topping. When you serve it without the tomato topping it is sweeter and creamier. With the tomato topping it leans more savory and has more texture. I had a really hard time deciding which I liked better, so I decided to make the topping optional, depending on what you are craving that day!
