Ingredients
2cupsflour
1¼teaspoonsalt
1teaspoonbaking soda
3tablespoonssalted buttersoftened
¾cupwarm water
Instructions
Whisk together the flour, salt, and baking soda.
Use your hands to mix the butter into the flour until it incorporates evenly. It should be a fine pebble texture.
Then pour in the warm water and work the mixture with your hands until it forms into a ball. It will be slightly sticky, but should be able to easily form to a ball.If it is crumbly after working it together, there is not enough water. Add water 1 tablespoon at a time until the dough comes together.
Knead the dough for 2-3 minutes on a floured surface until it becomes elastic. Then divide the dough in 12 equal pieces and roll each into a tight ball. Let rest for 5 minutes.
Once the dough has rested, press the ball between your hands to flatten, then use a rolling pin to roll the ball out into a paper thin circle on a well floured surface. Move the tortilla to a piece of parchment paper. Repeat until all tortillas are rolled out.
Heat a skillet over medium high heat. Once hot place a tortilla in the pan. Let it cook on one side until it starts to bubble (about 45 seconds) then flip and cook for about 30 seconds on the other side. Remove from skillet and repeat until all tortillas are cooked.
Notes
Homemade tortillas can be kept at room temperature for 1-3 days. To maximize freshness, I like to reheat on the stovetop before serving.If you want to keep them longer, the flour tortillas will freeze beautifully. Place parchment between each one to prevent sticking and package in a ziplock bag. Freeze.When ready to eat, thaw, or toast each one lightly in a skillet for best results. (you can put them in the skillet frozen and do not have to wait for them to thaw.)
