Ingredients
For the Ground Beef Bulgogi
2poundslean ground beef
½cupsoy sauce
3tablespoonsbrown sugar
2tablespoonssesame oil
½teaspoonground black pepper
2tablespoonscornstarch

½cupchopped green onionsplus more for garnish

For the Bulgogi Bowls
1cupjasmine rice
4cupsshredded cabbageor coleslaw mix
8mini sweet pepperssliced
1english cucumbersliced
2green onionsfinely sliced
For the Creamy Chili Sauce
2tablespoonsmayonnaise
1tablespoonchili garlic sauce
1tablespoonlime juice
Instructions
Cook the rice per package directions.
To prepare the Beef Bulgogi
Prepare the bulgogi sauce by whisking together the soy sauce, brown sugar, sesame oil, and black pepper. Combine the cornstarch with water to make a slurry, then whisk that into the sauce. Last, stir in the green onions and garlic.
In a large skillet, brown the ground beef over medium high heat, about 7-10 minutes. Break up with a spatula as you cook.
Once cooked through, drain any excess liquid or fat from the ground beef, then return to the stovetop. Pour the bulgogi sauce over the meat and stir to coat. Allow the sauce to simmer for 1-2 minutes or until thickened.
Remove from heat and garnish with additional green onions, and sesame seeds.
To make the Creamy Chili Garlic Sauce
Whisk together the mayonnaise, chili garlic sauce, and lime juice until combined.
To assemble the Bulgogi Bowls
Place rice and cabbage in the base of a wide flat bowl.
Top with ground beef bulgogi. Add cucumbers, peppers, and green onions.
Drizzle chili garlic sauce over the top.Repeat to make up up 4 bowls.
