3large onionsor 4 medium onions
1tablespoonolive oil
1/4teaspoonsalt
1/4teaspoonblack pepper
1/2cupsour cream
4ouncescream cheese (half brick)softened
1/2cupmayonnaise
2teaspoonhot sauceoptional
Instructions
To prepare the onions: Half each onion and discard the ends and peel. Then slice each half into thin strips.
To cook the onions: Place all onion in the crockpot. Drizzle with oil then season with salt and pepper and mix to coat.Cover and cook on low for 8 hours. (Many times I will do this overnight and let it sit on "keep warm" until I am ready to make the dip.)
To make the dip: Stir in sour cream, softened cream cheese, mayonnaise, and hot sauce. Mix until everything is combined. Taste and season with additional salt and pepper if desired.Note: If you want a thicker dip you can remove the onions and drain the juices. I like to keep them because they are so flavor packed.
To serve as a hot dip, keep in the slow cooker on the "keep warm" setting. To serve as a cold dip, transfer to a container and chill for at least 1 hour, or until you serve the dip.
Notes
This dip can be served warm or cold and will thicken when chilled.
