Ingredients
2poundsboneless skinless chicken breasts or thighs
2tablespooncornstarch
2tablespoonwater
1/3cupsoy sauce
1/3cupbrown sugar
2tablespoonsketchup
1tablespoonapple cider vinegar
3garlic clovesminced
½teaspoonminced ginger
¼teaspoonred pepper flakes
Garnish (optional)
sesame seeds
sliced green onions
Instructions
Combine the cornstarch and water to make a slurry. Whisk together the soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, cornstarch slurry, ginger and red pepper flakes.
Lay the chicken in the bottom of the slow cooker. Pour the soy sauce mixture over the chicken.
Place the lid on the slow cooker and cook for 2.5-3 hours on high, or 3-4 hours on low.
Remove chicken from the slow cooker and shred, then stir back into the bourbon sauce.
Notes
Chicken thighs are more traditional for bourbon chicken, but my family prefers chicken breast which is why I tend to use it more often. Boneless, skinless chicken thighs can be used interchangeably in this recipe.This recipe makes enough sauce to coat the chicken. If you like extra saucy chicken, I recommend doubling the sauce.Substitutions:
Chicken: Can use boneless, skinless chicken thighs instead of breasts.
Soy sauce: For a gluten-free version (or if you're looking for less sodium), swap in Tamari.
