In a large bowl, combine the sliced apples and cranberries with white sugar, tablespoon of flour and cinnamon. Stir until all the fruit is evenly coated.
Make the crumble topping by combining the oats, 1 cup of flour, brown sugar, baking powder and melted butter.
Work the mixture with a fork or your fingers until everything is moistened and it starts to come together in pieces the size of gravel.
Spread the apple mixture in a 9x13 inch baking dish. Pour the crumble topping over top and then spread it evenly to cover the top of the apples.
Bake for about 1 hour or until the edges are bubbling all the way around and the topping is lightly browned and crispy.Let cool 15-20 minutes then enjoy alone or with a scoop of vanilla ice cream.
Notes
The fresh cranberries provide a tart punch that is balanced by the sweet apple filling. If you want less tartness, you can chop the cranberries before adding to spread the flavor out more.Substitutions: Frozen cranberries can be used in place of fresh (add them straight from the freezer without thawing), and old-fashioned oats can substitute for quick-cooking oats if that's what you have on hand. How to Store: Store leftover crumble in an airtight container in the refrigerator for 3-4 days. How to Freeze: Freeze the crumble either before or after baking in an airtight, freezer-safe container for up to 6 months. How to Reheat: Warm individual portions in the oven at 350°F until heated through, or microwave for a quicker option. How to Scale: This recipe can easily be doubled for a larger 9x13-inch dish crowd or halved and baked in an 8x8-inch dish for a smaller batch.
