Ingredients
2blackened chicken breastsor thighs
2kaiser buns
1tablespoonbutter
1ouncecolby jack cheesesliced
2leavesromaine lettuce
1/4cupsliced onion
1/2avocadosliced
For the Cajun Sandwich Sauce
1/4cupmayonnaise
2tablespoonsketchup
1teaspoonblackened seasoning
2teaspoonslemon juice
Instructions
To make the sandwich sauce, whisk together all ingredients until combined. Refrigerate until ready to use.
If using leftover blackened chicken, heat a skillet over medium heat. Cook chicken 1-2 minutes on each side, or until heated through. Remove and set aside.
Melt the butter in the skillet and place each half cut side down, and cook until toasty and golden brown. Remove and set aside.
Spread sandwich sauce on the bun then layer chicken, cheese, lettuce leaves, onion, avocado and top with the bun. Serve immediately. Enjoy!
